25.01.2022 As spring unfolds flavoursome tomatoes return. This was a rustic fresh tomato sauce I cooked one night last week for dinner. If the tomatoes are good (which ours were as they are currently included in our Fresh Produce Box), all you need is fried onions, a touch of garlic, fresh herbs (pictured is Greek oregano from the garden), Cobram Estate extra virgin olive oil, Murray River Salt and freshly ground pepper to make a tasty and simple pasta meal.

24.01.2022 Not the prettiest photo but boy oh boy did this taste good! A fridge salad for dinner uses up the veggie bits and pieces. With a little imagination and some pantry helpers a frog is turned into a prince. Roast root veggies (beetroot, carrots, red onion and capsicum), fry sliced zucchini, toast and cook buckwheat, toss with mint, parsley and coriander (which has gone to seed in the garden!) add golden fried salty haloumi cheese and drizzle with a pomegranate molasses vinaigret...te. When making up your own recipe, think about how to include varying textures, salty and sour or sweet flavours, vegetables and a protein and what will bring them all together - in this case the vinaigrette. #dinner #nomeat #imagination #homecook #teacher #cookingclass #mattersoftaste #thecookscollectiveau #getcooking
24.01.2022 We teach real life classes and discuss what to look out for in the kitchen so success can be yours for the taking! In todays Sourdough Class we showed participants what their loaves would look like if over-proved! Can you spot the 2 bricks in the foreground of the photo!! Totally edible and in fact delicious but would win no prizes at The Royal Show. The rest of the loaves were stunning. Spread with the cultured butter we made in class this made for a tasty end to a rewarding afternoon.

24.01.2022 Stunning Carnarvon runner beans in this weeks Fresh Produce Boxes. I fried a small chopped onion in a big knob of butter until soft then added diced fresh tomato and seasoned well with salt and pepper. While the beans were simmering in salted water for 4-ish minutes the onion and tomato mixture continued to cook until the tomatoes softened. I drained the beans and tossed them, steaming into the onion mix. 23.01.2022 I've been so inspired by this Ruth Bader quote this week - I think it will stay with me for a long time. I truly believe society in general has accepted being spoon-fed in so many areas of our lives. Today, we want instant answers to our questions, fix-its' for our troubles and 'instant food' at our front doors or in our cars.... Something has to shift from the ground up. Whatever your food 'values' are it may lead to a conversation this weekend to "Fight for the things you care about, but do it in a way that will lead others to join you". I'll leave this thought with you.

15.01.2022 On Sunday on a windswept deserted beach at the mouth of the Donnelly River, I found two plants that looked edible... so I sampled both! The first was a little bland and faintly salty and the texture was like eating paper (did anyone chew on paper sometimes at school to relieve boredom ). Not sure that this would be ideal to use in home cooking as I think many would not appreciate the mouthfeel. The second plant was incredible - it tasted just like wasabi with a clean fini...sh. This is a ‘beach mustard’ and would be delicious served with white or red meat hot off the BBQ. The Donnelly is a fascinating 16km estuarine stretch of water and can be classed as pristine wilderness. If this river is messed with and the water dammed to supply agricultural areas in our SW the area will literally disappear. The government is not to be trusted to carry out this plan without impacting this important area. Please help by signing the Don’t Dam the Donnelly River petition at change.org #dontdamthedonnelly

Mother’s Day has been and gone in England and so, on Australia’s Mother’s Day I find myself reminiscing. When I was a child mum provided a safe and loving home so my sister and I were cared for and cherished every day. At 82, she still loves cooking and is one of the best cooks I know. Having 2 grown... daughters myself, I appreciate what mum taught me, leading by example and hope her warmth and love continues on down through generations to come. Being a mum is my favourite ‘job’. This was my bake yesterday - a bit late into the oven after an afternoon second rise as I forgot to take my dough to work with me in the morning! Trouble shooting is no-stress too, even when the dessert is completed in glasses ready to chill and the discovery is made that the sugar is still in the bowl on the bench! Super-tasty and easy to make (Yotam’s recipe is included in this post) I did however replace the frozen corn with fresh sweetcorn. It was a winner with my lot around our table!
