25.01.2022 The story of my Tommies is that when out fishing these were often my main catch. Once I learnt they were an Australian herring I started to wonder how they’d smoke up. Pretty soon I was smoking a batch of these everytime I caught some or when they were a good price at the markets. ... They kind of became the fish equivalent of salami in our house. Awesome for a snack and even better as a nibbles option on a charcuterie board - I call them charcuterie of the sea now - since they sit so perfectly on a grazing plate. Of everything I do these are my hands down personal favourite. The fact they are local and sustainable is an added bonus too. Dig in. His name was Henry Harrison and he ran a business called Chapmans Smallgoods, which was an iconic South Australian brand when I was growing up. The Chapman’s warehouse was one of my favourite places to be as a kid. Snacks of fritz, mettwurst and ham always included! These memories have driven a lifelong interest in food and a passion for curing. So having him on my label feels completely right as an acknowledgment of his in...fluence... 11.01.2022 The story of my salmon is that my wife asked me to try adding a side to the smoke box. She loved hot smoked fish but hadn’t found a version with the flavour profile she was after. I hadn’t tried my hand at salmon before. Applying the principles of previous experiments with curing, I had a crack. It immediately became a fast family favourite. Compulsory on the table for all special occasions. Soon after my friends became committed fans too.
