23.01.2022 Todays healthy lunch or dinner .... Fish with Mediterranean Vegetables . .... Serves 2 120 g White Fish Fillet, Boneless 1 tsp Olive Oil 100 g Fennel Bulbs, sliced about 1/2 cm thick (remove outer leaves) 80 g Green Capsicum, chopped 80 g Eggplant, chopped 2 Garlic Cloves, peeled and left whole 120 g Chopped Tomatoes 40 g Olives, black 1-2 tsp Fresh Oregano, chopped Salt and Pepper to taste 1-2 tbsp Apple Cider Vinegar Fennel Fronds and Fresh Basil to Garnish . . Pre-heat oven to 200C. Heat some oil in a casserole dish over medium heat. Add sliced fennel, eggplant and capsicum and saut until it starts to brown and soften. This should take 5-7 minutes. DO NOT over crowd the pan as they will stew in their own juices rather than be nicely sauted. Add extra oil to the pan if necessary and then add garlic, saut 2-3 minutes, until fragrant. Add tomatoes, olives, oregano, salt and pepper to taste. Simmer covered until the garlic is softened. Then add all the cooked vegetables and vinegar and heat through. The fish can be cooked in the pan on low heat if you like, otherwise cook in the oven. Season fish fillets with salt and pepper and lay them on top of the vegetables. Drizzle them with some olive oil and sprinkle over some fennel fronds and fresh basil. INGREDIENTS 8 slices bacon 2-3 Tbsp reserved bacon fat 1 medium onion chopped 4 cloves garlic minced 8 oz white mushrooms sliced 10 oz baby spinach roughly chopped Sea salt and black pepper to taste Crushed red pepper to taste 6 large eggs Chopped fresh parsley for garnish INSTRUCTIONS Cut bacon into pieces and heat a large skillet over medium-high heat. Preheat your oven to 400 degrees. 6 ramekins, with 6-8 oz capacity. Add bacon and brown. Cook until crisp, remove with a slotted spoon to paper towels to drain. Reserve 2-3 Tbsp bacon fat and set heat to medium. Add chopped onions and sprinkle with salt and pepper. Stir and cook until translucent and soft (about 2 mins). Add garlic, mushrooms and stir to coat. Cook until softened - about 3 minutes. Add chopped spinach in batches to wilt. Sprinkle with salt and black pepper, and crushed red pepper to taste. Once all the spinach is wilted, add bacon back in, then remove from heat. Distribute the mixture evenly among the 6 ramekins, then carefully crack an egg into each ramekin. Keto Asparagus Frittata Serves: 1... 1 tsp Olive Oil 40 g Onion diced 60 g Asparagus chopped 60 g Grape Tomatoes halved 2 Eggs 15 g Cream 30 g Low Fat Cheddar Cheese grated 60 g Mixed Salad Leaves to serve 1 tbsp Flaxseed Oil 1 tbsp Apple Cider Vinegar Heat oil in non-stick fry pan, add onion and cook until brown, add asparagus and cook for a few minutes to soften then add grape tomatoes, stir to combine. Kiwi, Watermelon and Coconut Popsicles Ingredients... 440ml coconut milk 190ml soy milk (alternatives: cow’s milk or almond milk) 50grams chia seeds 1 tablespoon honey/ agave syrup 3 kiwi fruits 800g watermelon (no skin) Peel and slice kiwi fruit into ring shapes approximately 2mm thick. Take the Popsicle moulds and press the kiwi fruit to the side of the moulds, 2 in each mould. Cut the watermelon into cubes and place in the food processor. Blitz to create a juice. Stir the chia milk mix occasionally while doing these other processors. Take the moulds and while holding the kiwi fruit again the sides with a chopstick or knife pour in the coconut chia mixture. Fill the popsicles 3/4 full. With the left fill with the watermelon juice, this should float nicely on top but if some seeps through don’t be worried. Place the sticks in the middle of the popsicles and allow to freeze for at least 4 hours or until the popsicles are solid. . . . . 07.01.2022 Spinach, Coconut and Zucchini Soup Serves 4 Ingredients... Soup 1-2 tbsp Olive Oil 1 tsp Mild Curry Powder 1/2 tsp Cumin Ground 1/2 tsp Turmeric Ground 160 g Leek 200 g Cauliflower 120 g Zucchini 1 Green Chilli De-Seeded, Finely Chopped 250 ml Hot Water 1 Ultra Lite Chicken Sachet or Chicken Stock Cube 400 ml Light Coconut Milk 120 g Fresh Spinach Parmesan Chips 30 g Parmesan Cheese . . Instructions Soup Heat oil in a large pot, add spices and stir to combine for a minute. Add leek, cauliflower, zucchini and chilli, stir to coat in the spices. Season with salt and pepper, cover the pot and sweat the vegetables over low heat for 5 minutes. Add the hot water, chicken sachet and coconut milk and cook for another 10 minutes or until vegetable are tender. Add spinach and stir, cook another 2-3 minutes. Blend the soup until smooth. Parmesan Chips Directions Bake in hot oven for 5-10 minutes or until golden brown. Serve Soup topped with Parmesan Chips. . . . INGREDIENTS 1 tablespoon coconut oil 1 large yellow onion, chopped 6 garlic cloves, minced 2 celery stalks, sliced 1 lb shitake mushrooms 1 1/2 tsp sea salt 1/4 tsp black pepper 1 tsp turmeric 12 cups water 4 heads baby bok choy, bottoms chopped off 1/2 head kale, chopped optional: 1 tablespoon freshly grated ginger INSTRUCTIONS Chop off the bottom of the stem from your mushrooms and discard. Separate stems from tops and slice tops and remaining stem if necessary, into large pieces. You will only discard the very bottom of the stems, not the full stems as they contain many nutritional benefits! Heat up coconut oil in a large pot over medium heat. Add onions and saut for 5 minutes or until translucent. Add in garlic and cook for 1 more minute. Add in celery and mushrooms and saut for about 10 minutes or until mushrooms have wilted. Add in spices (including ginger, if using) and water and bring to a boil. Then let simmer, covered for 1 hour or as long as you want (the longer you leave, the better!)
