Total Time 30 Mins Serves 6 Falafels: 250g chickpeas, drained 1 garlic clove, crushed red onion, diced 1 tsp ground cumin 1 tsp ground coriander tsp cayenne pepper tsp turmeric powder 1 tbsp. (15g) chia seeds 1 tsp salt 2 tbsp. chickpea flour (basen flour) Tzatziki: 200g Greek natural yoghurt 1 lemon, juice 1 sprig mint, chopped 70g cucumber, diced 1 tsp salt 1 tbsp. extra virgin olive oil garlic clove, crushed Falafels: Place chickpeas in a food processor/blender and process. Add crushed garlic, diced onion, cumin, coriander, cayenne pepper, turmeric powder and chickpea flour and blend until combined. Stir through remaining chickpeas and chia seeds. Shape into 10 flattened balls. Heat a little oil (2 tbsp.) in a fry pan and cook until golden on both sides. Alternatively, pre heat oven to 200C and bake for 15-20 minutes until golden. Soothing pose, can make you feel safe and comforted. Cat Cow On your hands and knees, inhale as your curve your belly down towards the floor and feel the stretch in your chest and neck. Exhale as you round your spine towards the ceiling. Extended Puppy Pose - Calms the mind, relieves stress and tension (in the spine, shoulders and upper back). Start on all fours with shoulders over wrists and hips over knees. Walk hands forward, keeping elbows off the ground. Draw hips back, lengthen the spine and bring forehead down. Side Stretch - Stretches the neck, shoulders, back and obliques. Sitting cross legged on the floor, place your left hand on the floor with your elbow slightly bent. Reach your right arm up and overhead, leaning into your left side. Hold, then switch sides and repeat. Seated Forward Fold - Calms the nervous system, quiets the mind. Sit on the floor with your feet together and legs extended in front of you. Exhale as you bend at the hips and lower your torso to your thighs. Lengthen your spine and hold your feet or calves. Reclining Bound Angle Pose - Opens up the front side of the body which can close in when you’re feeling stressed and anxious. Lie flat on the ground, bend your knees and allow them to relax to each side. Corpse Pose - Considered one of the most important poses in yoga, where your body integrates all of the previous poses, receiving all of their benefits. It also allows your body and mind to fully relax and restore. Laying on your back, extend your arms and legs, letting your feet drop open at the sides with your palms facing up. Close your eyes. Servings: 4 Ingredients 600 g Pumpkin cut into cubes... 80 g Onion chopped 500 ml Water 1 cube Chicken stock cup Cream 10 g Parsley fresh, for garnish 4 slice Bacon diced Salt and pepper to taste Instructions Place pumpkin, onion and stock cube in a saucepan with water. Cover with lid and bring to boil. When boiling, remove the lid and cook until pumpkin is soft. When the soup is cooked, blend vegetables and remaining liquid until smooth. Place diced bacon in non-stick pan and cook, stirring until crunchy. Return soup to saucepan, add cream, and gently heat (do not boil). Place your pumpkin soup in serving bowls and sprinkle with the bacon, parsley and salt and pepper to serve. . . . Kiwi, Watermelon and Coconut Popsicles Ingredients... 440ml coconut milk 190ml soy milk (alternatives: cow’s milk or almond milk) 50grams chia seeds 1 tablespoon honey/ agave syrup 3 kiwi fruits 800g watermelon (no skin) Peel and slice kiwi fruit into ring shapes approximately 2mm thick. Take the Popsicle moulds and press the kiwi fruit to the side of the moulds, 2 in each mould. Cut the watermelon into cubes and place in the food processor. Blitz to create a juice. Stir the chia milk mix occasionally while doing these other processors. Take the moulds and while holding the kiwi fruit again the sides with a chopstick or knife pour in the coconut chia mixture. Fill the popsicles 3/4 full. With the left fill with the watermelon juice, this should float nicely on top but if some seeps through don’t be worried. Place the sticks in the middle of the popsicles and allow to freeze for at least 4 hours or until the popsicles are solid. . . . .
