25.01.2022 So I just recently had the opportunity to go to gilberton outback retreat to do some cooking for a friend... I had an amazing time out there and would highly recommend visiting and staying in the retreat.. thanks for having me guys and hope to be back soon..

08.01.2022 So I tried out something new the other day... Lemon cheesecake sao slice with passionfruit icing.... 500g philly cheese 1 tin condensed milk (nestle)... 1 tub of devondale cream (uht) Rind of 2 lemons Juice of 2 lemons 1pkt SAO's Icing sugar Beat philly cheese, condensed milk, and cream together until creamy and smooth add lemon rind and beat for another 2 minutes.. add lemon juice and beat for another 2 minutes.. Place a layer of sao's down on a deep tray, I use 12.. then top with mixture and another layer of sao's, place in fridge and let set... top with passion fruit icing and leave in fridge... best the next day as sao's have had time to soften slightly...

03.01.2022 2nd day of cutting up a beast, station life... love it.. apart from catering I work out on local cattle stations as a camp cook.. I also do everything else from mustering, fencing ,gardening and a lot of wine and rum drinking to keep myself sain... my son scotty tags along with me and enjoys going out mustering aswell while I'm keeping the homestead going and everyone well fed... food is a part of life, it's a part of my life and I love to make people happy... I reckon they think about it all day while there out there in the hot sun... ( what is melby cooking us today)..

30.12.2021 Highly recommended to all you mums out there, I found this lady when I moved to the big CT, her cordial tastes as natural as you can get, and absolutely amazing.. flick her an email for an order.. she does do alot of different flavours..
