24.01.2022 Salted caramel cheesecake jars made by me! Every time I've made these I've been asked for the recipe. I'm not known for culinary skills; it's all thanks to this simple recipe! - 2 packets Arnott's Anzac Biscuits... - Melted, unsalted butter (enough to get crushed biscuits combined) - 500gram packet cream cheese, room temperature - 400gram can sweetened condensed milk -1/4 cup (roughly 1.5 lemons) fresh lemon juice -1 tablespoon vanilla extract - Salted Caramel (from a jar - I'm too lazy to make it!). This time I purchased from @fantaizicake_perth. Put Anzac's in a ziplock bag. Using a roller, crush them until they become chunky crumbs (you want some texture!). Pour crumbs into a small mixing bowl, add melted butter. Mix until combined. Put a base layer of crumbs into jars, press down. Refrigerate, until crust is solid. To make the cheesecake, beat the cream cheese with an electric mixer till it’s soft and creamy. Bit by bit, add in the condensed milk, making sure it’s fully integrated. Finally, add lemon juice and vanilla, making sure it’s fully mixed. Remove the jars from the fridge, and add the cheesecake filling. Refrigerate before adding the salted caramel. If time permits, I like to do multiple layers. Finish with some Anzac crumbs and a drizzle of salted caramel. Thank me later :) See more
