08.01.2022 HEALTHIER FRIED CHICKEN!! Fried chicken tastes soooooo good! But the chicken you buy from a fast food place will often have loads of artificial additives and wi...ll be cooked in a toxic vegetable or seed oil. This recipe uses my Beef Broth BBQ Rub for loads of flavour and it's really simple to make for a weekend 'fake-away' dinner for the family. Serve with some oven baked potato wedges and coleslaw! PS Apologies for the photo - it's hard to take a good one at night in poor light with hungry kids waiting to eat it! Healthier Fried Chicken 500g free range, organic chicken thigh fillets 2 tablespoons Beef Broth BBQ Rub 3 tablespoons tapioca flour/starch Good quality extra virgin olive oil Cut each chicken fillet into six pieces (or four, depending on the size!). Toss with the combined Beef Broth BBQ Rub and the tapioca starch. Add olive oil in a wide, shallow frypan to about two centimetres deep and heat to a medium high temperature. Carefully place the chicken in batches into the oil and fry until cooked through, a few minutes each side. You may need to add more oil between batches. Enjoy! This recipe is gluten free, grain free, dairy free, nut free, additive free and suitable for paleo diets. It will feed four but you might want to make more because it's so delicious. Studies have shown olive oil is quite resistant to heat and doesn’t oxidize or go rancid during cooking. You could also use tallow or lard instead of olive oil if you have it.
