25.01.2022 BREAKFAST TOASTIE I love the classic ham and cheese toastie but this morning I made a Mediterranean version with homemade pesto as the spread, labeh, pitted kalamata olives and baby spinach leaves. 22.01.2022 ARRABBIATA PASTA I love a good honest wholesome bowl of pasta and with the winter here in Australia I’m turning more towards comfort foods these past few weeks. Having spent time in Italy I’ve learnt appreciation for pasta and the many flavoursome sauces one can have. Today I made a Arrabbiata sauce and added a can of tuna. 19.01.2022 ALFREDO CAPPELLACCIO Serves 2 Cook Under 30 minutes 150g smoked spec, finely chopped 250g ricotta&spinach cappellaccio (pasta) ... 3 free range eggs, whisked 1/4 cup cream or milk Salt and pepper to taste Parmesan cheese, grated to taste 1. Sauté spec in a frypan until golden and crispy, drain excess fat (oil). Set aside 2. Bring a medium saucepan to the boil with water and cook cappellaccio (pasta) for 4 minutes. 3. Return frypan with spec to a low heat and using a slotted spoon transfer the drained cappellaccio to the frypan and add 1-2 labels of the boiling pasta water. 4. Add eggs and cream to the pan and stir over a very low heat. 5. Season with salt and pepper. 6. Once eggs are just starting to thicken Remove from heat and serve into bowls and sprinkle with grated Parmesan. 16.01.2022 A CLASSIC BREAKFAST- Bratwurst (German sausage and chilli beans) - this morning as the weather is getting cooler here in Australia we are turning to warming comfort foods. Today I’ve cooked sausages with chilli beans and it’s so delicious . Simply brown sausages in a frypan add a can of cooked beans and a can of tomatoes and a small can of corn and sprinkle in some chilli spice and season with salt and pepper and serve! 10.01.2022 LAMB CHOP STEW - last night I cooked a dish that warmed our souls. Into a large ovenproof Dutch oven I simply chopped a onion and leek with 4 whole peeled tomatoes, diced 3 small carrots, added a pouch of pre cooked brown rice & quinoa, 1/2 jar green olives with anchovies including the brine, 2 veggie stock cubes, crushed garlic, 2 cups water and 2 large seasoned grass fed free range lamb forequarter chops and sprig of rosemary. Cover with lid and braise in oven at 180C for approximately 2 hours until meat falling away from bones. OMG! So flavourful and buttery, lamb melting in your mouth. I sauté onions, leeks, spinach, zucchini then cool add crumbled feta. Brush filo sheets with olive oil place filling into centre and roll up! 06.01.2022 SPINACH & RICOTTA CANNELLONI Last night we took a food trip to Italy and I made cannelloni. I had such fun filling the cannelloni shells. Simply sauté 30g baby spinach leaves with olive oil and garlic. Remove and set aside to cool. Once cooled add 1 tsp dry mixed herbs , pinch salt & pepper, freshly ground nutmeg, 300g ricotta, handful grated Parmesan, and 1 tbsp Flour, mix well and spoon filling equally among cannelloni, i filled about 16 shells with this amount. Place the... shells evenly in single layer on the bottom of oven proof dish, I used 2 dishes for this. Cover cannelloni with Passata (tomato pasta sauce) a 700ml jar is perfect and add a little water to fill in edges. Sprinkle with grated Parmesan. Bake in preheated oven 160 fan forced for 30 minutes allow to cool for 5 minutes before serving. 06.01.2022 INDIAN BEEF CURRY with Biryani Rice Keeping with the slow Winter days and slow cooked food, last night I simmered a Indian spiced beef curry for 2 hours and served with fragrant carrot rice. It was sensational. Simply sauté 600g seasoned cubes of beef chuck steak, chopped onion, add 1tsp each cardamon, curry, coriander and garam masala powders, 1tsp cumin seeds, 6 whole cloves, 1 cinnamon quill, 2tsp each of chopped ginger, garlic and red chilli. 400ml beef stock and 400ml c...oconut milk. Bring everything to a simmer cover with lid and cook for 2 hours. Serve with flavoured rice. To make the Biryani Rice simply chop onion, carrots and add 1 tsp chopped garlic. 200g basmati rice, punch saffron threads, 1tsp turmeric, salt, water to cover and 1/4 cup currants. 04.01.2022 BEEF CHEEK RAGU I like to take things slow particularly on Winter Sunday’s so it’s perfect for slow cooking. This recipe takes me about 4 hours to make from start to finish and the results are a rich flavoursome tasty sauce with tender shreds of meat to pair with pasta or creamy mashed potatoes. Simply sauté seasoned beef cheeks, add chopped onion, carrots, celery, red wine, garlic, herbs, salt& pepper, bay leaf, Star anise, cinnamon quill, tomato paste, canned tomatoes, chopped chilli, beef bone broth. Cover and simmer for 3 hours. Remove the cinnamon quill, star anise and bay leaf. Using back of spoon simply push meat so it’s falls apart and you have lovely shreds of meat.
