01.01.2022 Cas calls herself a "one pot cook" .... using one saucepan, one wok or one casserole dish ... keeping it simple, but wholesome & delicious. This recipe she (thank goodness) has written down! SERVES 6-8 2 cups of cooked brown lentils (can used organic canned) 1 can of organic crushed tomatoes.... 2 carrots - don't peel, just wash well. Chop into small pieces 1 large brown onion 4-5 button mushrooms, sliced 1/2 red capsicum, diced into small pieces 1 cup of frozen peas 2 Vegetable Stock Cubes 2-3 tablespoons of Tomato Paste 1-2 teaspoon of dried mixed herbs 1 clove of garlic Generous sprig of parsley well chopped. 2 tablespoons of Extra Virgin Olive Oil and Seasoning to taste (salt, pepper or 1 tablespoon soy sauce) Grated tasty cheese (optional) TOPPING: Mash Cauliflower (cut up & steam a whole large cauliflower until tender, add some butter, season with salt & mash until smooth - a great alternative to mash potato). You can of course use mashed potato (or a mix of the both is great) METHOD: Pre-heat oven to 220 C. In a large frypan, add Olive Oil, mixed herbs, parsley, onion, garlic & capsicum. Cook 5 minutes. Add mushrooms, carrots & cooked Lentils & stir well. Cook for 5 mins, adding a splash of water if needed (or wine). Add can of tomatoes, frozen peas, more red wine if desired, & sprinkle Stock Cubes throughout. Stir well. Turn heat down to simmer & add in Tomato Paste. Season with salt & pepper as desired. Cook for another 10 mins. Transfer into a casserole dish, distributing evenly along the bottom. Top with the mashed cauliflower (or potato) at least an inch thick, making sure it completely covers the mix. Sprinkle with cheese and cook! Here I wanted to share a little about the foods I know can really transform you and in particular your skin health. 1. Fatty Fish im not a huge fan of fish but it is so good for you and I try and have it at least once a week mixed in with foods that dont allow me to really taste the fish too much!! 2. Avocados OMG I love Avos and I get to eat them endlessly! Winning! 3. Sunflower Seeds I have about a handful of mixed nuts once a day and sunflower seeds are just yum. 4. Sweet potatoes the only potato I get to eat on Keto so they feature big on my regime. 5. Tomatoes last (but not least) one of my favourite foods so delicious just fresh with basil and s&p nomity nom nom!
