22.01.2022 Check out these awesome DEEZ NUTS bars which were made by Derek Lau and follow the recipe to make your own! Makes: 16 squares Preparation time: 15 minutes Cooking time: 20 minutes... Difficulty: Easy Ingredients ----------- 1 cup almonds 1 cup cashews 1 cup peanuts, lightly blitzed (not fine) 1 cup pecans, lightly blitzed (not fine) 1 cup walnuts, lightly blitzed (not fine) 1 cup pepitas cup sunflower seeds or dried cranberries 1 cup coconut palm sugar (or substitute with 1 cup light brown sugar or 1 cup white sugar) cup agave syrup (or substitute for cup corn syrup or brown rice syrup, I prefer to use these than honey or maple syrup as honey and maple syrup may crystallize) Generous pinch salt 1 tsp vanilla extract 100g dark chocolate Method ----------- 1. Line a baking dish (thick bottomed) 9x9 square with parchment paper. Depend on how thick you want your bars to be you can use a wider baking pan (i.e. a rectangular shape). Preheat oven to 170 degrees. 2. Mix together all nuts in a large bowl. 3. In a medium saucepan, heat the coconut sugar, syrup, salt, vanilla extract. When it has all just melted, mix the nuts into syrup instantly, making sure it is all covered. Stir together with a wooden spoon. 4. Press the mixture into the prepared tin, and press using baking paper to make sure it is packed tightly. If required, use a cup to help push everything together. If it is not packed tightly it will not set and cut properly. 5. Bake in the oven for 20 minutes until top is golden, then allow to cool for about an hour until room temperature. 6. Lift the out of pan, invert and cut into approx. 16 squares, or smaller/larger as desired. 7. In the microwave, melt the chocolate in 30 second bursts until melted. Pour the chocolate into a plastic bag and snip the corner off. Pipe the chocolate over the bars. 8. Let the bars cool and then wrap. See more
