11.01.2022 Blue Bianca is produced in the highland plateau of Onang Ganjang, Sumatra by small holding farmers. The fresh cherry is picked, pulped and fermented for 12 hours without water. It is then hulled and parchment washed before being left to dry for 2 days. Following this, parchment is removed using the Giling Basah process of wet hulling, which is unique to Sumatra. From here, green beans are dried for a further 5 days before being hand sorted and left to rest for 30 days pr...ior to shipping. Blue Bianca is prepared by a young local processor in Dolok Sangul. From crop to cup, this coffee is carefully managed and undergoes strict quality checks at every stage. It has received a cupping score of 93 and we are proud to be using it in our house blend, Blazing Desert. - @coficomtrading

Everyone plays a role in this so let’s all do our bit.... Right now we really need to take care of ourselves and those around us. We are deeply social creatures, yet it is imperative that we maintain physical distance from one other. It is a huge challenge to our collective livelihood and mental health, but it is very important that each of us work hard to protect the vulnerable, and in turn, minimise the pressure on our health system. Outside of this virus there are still many health issues that our society continues to face. It is not difficult to imagine a scenario where we may need urgent care for ourselves or someone we care about in the foreseeable future. If our heath care system is struggling due to COVID-19, then the urgency of such needs will suffer too. Let’s do what we can together to protect each other and our future.
