21.01.2022 KID HEALTHY and still HAPPY CHICKEN NUGGETS in 15 MINUTES! For this Friday Night we have found a way for you to keep your Kids healthy but still happy with this delicious still nutritious version of traditional chicken nuggets and one you can eat guilt free any day of the week. We have used almond meal and coconut but you can use any grounded nut meal for a gluten free dish or traditional flour if that is all you have on hand. The best part, it only takes 15 minutes. Prep t...ime: 5 minutes Cook time: 10 minutes Ingredients Chicken breast, cut into strips (smaller = quicker cook time) Almond meal or other nut meal of choice 1 egg, beaten 1 tbsp extra virgin olive oil (enough to lightly cover the pan) Instructions Heat olive oil in a large pan over a medium heat. Dip the chicken strips into the beaten egg and then coat in the almond meal before placing into the pan. Cook until golden on both sides. Serving with your choice of vegetables or salad, maybe some sweet potato wedges! Enjoy!

Especially during these times where so many of us are still working from home, perhaps still homeschooling, suffering from virtual fatigue or just trying to keep up with the daily demands of working life in general. Recently we have been touching base with a lot of our clients in group coaching calls and the number 1 reveal was that balance isn't something you stumble on, it's ...something you have to actively pursue, it might look and feel different one day to the next, but if you want to feel a certain way in life or achieve a certain goal or live with intention when it comes to wellbeing, health and happiness then the only way to do that is to stop searching for it and start creating. Here are 3 easy tips and strategies that are working for some of our clients right now... that might see you start shifting the scales more in the direction you want to head. 1. Accountability, find someone who is going to get in your corner and back you all the way when it comes to helping you make more time for your wellbeing. It could be a friend, your partner, a colleague or for some even a new puppy. When you have someone else alongside you to turn up with it's a lot harder to back out. 2. Schedule yourself in and don't negotiate. If you are looking to create more time for yourself or time to connect with family and friends, then try blocking time out for yourself and treat this time with as much significance then any other meeting you have scheduled. 3.Be conscious of you daily habits, write them down and decide what habits are worth keeping and what ones are worth changing or letting go all together... the first step to creating change and gaining momentum is to create awareness around what's working for you and what isn't.
