Ingredients:... 3 overripe bananas mashed 1 egg beaten 1 1/2 cups SR flour 90g melted butter 1/2 caster sugar 1 teaspoon vanilla 1/2 teaspoon ground cinnamon Optional 50g walnuts chopped if desired Pre heat oven to 180C & line loaf tin Mix banana with the beaten egg. Add all other ingredients. Mix together with fork. Place mix into loaf tin bake approximate 45 minutes.
