14.01.2022 So we got the Starbucks coffee delivered in a tapioca starch baggie.....it inspired me immediately to soak some spy and try it out for tempeh making. I saw a great opportunity here to reduce plastic use in the process of tempeh making. The first lacto fermentation was great, ph 3.8, process as per normal, filled the shopping bag, used staples to seal it and poked holes with a toothpick. Put away in the fermenter and next day after 14 hours the mycelium started to grow. Next ...day , to my surprise I saw that the growth was so prolific that even little mycelium clouds popped out of the bag...almost as in the use of baba leaf... When the tempeh was done, it was beautiful and made me so . It was as strong in texture and small as the best tempeh I ever made... Beautiful smell, I love that So here we are, I'm going to follow this up and talk the the producer about developing a product suitable for tempeh production and hopefully you guys are willing to have a go at it..
