Why not give this a go and Supercharge your energy with our Superfood Frittata Ingredients: -4-6 cups your fav roasted veg- think pumpkin, carrot, sweet potato, zucchini, red onion, garlic, fennel, cherry tomatoes etc. ... -1 can lentils, rinsed and drained -1 cup left-over cooked quinoa -8-10 eggs, beaten well (10 if they are small eggs) -splash preferred milk replacement -optional throw in some greens such as baby spinach, or extra yumminess with goats cheese, olives, sundried tomatoes etc Method: Roast veggies- Chop everything roughly, throw into a large baking dish, drizzle with olive oil and season well with salt, pepper and fresh or dried herbs such as thyme and rosemary, then roast until slightly caramelised. Mix through drained lentils and quinoa and any optional extras such as goats cheese or greens. Pour eggs over evenly, cook at 180 degrees until set. Serve with shredded veg or salad, balsamic reduction and Basil and macadamia Pesto (pictured). Pesto: Blend 1 cup raw macadamias, 1 bunch fresh basil leaves, juice of 1-2 lemons, maple syrup and pink salt- start with 1 lemon, a splash of syrup and 1 tsp salt and keep adding to balance to your tastes. Frittata and pesto will keep in the fridge for several days.
