24.01.2022 A fire today outside at the Munstas to celebrate our Easter and not being able to go anywhere. Apart from filling up on Chocolate, we also smoked some Pork Spare Ribs for 6 hours over Redgum chunks using the 3 2 1 method. 3 hours smoked, 2 hours wrapped in a bath of Brown sugar, Butter and Apple juice then 1 hour unwrapped and slathered in a homemade Bbq sauce. Shae also made us some Meatlover pizzas in the house with Garlic bread. Happy Easter

20.01.2022 For our entree tonight, Chris made us some awesome Corn and Jalapeno Fritters with a Corriander Pesto on the side. Very easy to make but taste very nice. 450 g (3 cups) frozen Corn kernels, defrosted 1 Egg 2 tbsp Sugar 1 tsp Baking Powder... 75g ( cup) of roasted Corn kernels 1 Jalapeno, finely diced (seeds removed for a milder taste) 3 tbsp Cornflour Vegetable oil, for deep-frying. Blend the defrosted corn, egg, sugar and baking powder in a blender until you have a smooth puree. Transfer the mixture to a bowl. Add the extra roasted corn kernels to the puree along with the diced jalapeno and cornflour. Gently stir to combine, then allow the mixture to sit for at least 15 minutes. Heat enough oil for deep-frying to 170C. To check the temperature of the oil, drop in a small spoonful of the batter. If it quickly rises to the surface, then youre good to go. To cook the fritters, use one soup spoon to scoop up the batter, then use another soup spoon to gently push the mixture off the spoon and into the oil. Make sure there is enough room for them to move around a little in the oil. The fritters will rise to the surface and begin to turn a golden brown. Flip the fritters over and cook the other side until crisp and golden all over this should take about 2 minutes. The corn needs to be completely dry otherwise the batter is too wet. Chris also added 2 tbsp of Polenta for a nice little extra crunch.

10.01.2022 Sunday night roast for tea. Slow Roasted Balsamic-Glazed Lamb Shoulder. Baa baa went into a 110c oven for 6 hours rubbed with a mixture of fresh Rosemary, Garlic, Olive oil, Salt n Pepper. About the last hour it gets a nice coating of a Balsamic glaze and repeated about 4 times. I turned the oven up for this as the vegies went into the oven as well which were a medley of Potatoes, Pumpkin and Carrots. Roasted until golden and cooked through then coated with the same rub as ...the shoulder, covered and let cook another 10 minutes. The shoulder was also served with packet peas but with a homemade Mint sauce. The lamb was so beautifully tender and with that caramelised glaze made it very nice. It probed like butter after 6 hours but could of had another hour just to make it totally pull apart.

06.01.2022 Beef Ribs with Buffalo Chicken Wings, Mac n Cheese and Texas Baked Beans tonight at the Munstas. The Ribs were cooked in the smoker for 7 hours over Stringy Bark chunks and the Wings for 3 hours then half tossed in a hot sauce and the other in sweet sauce. Not a clean face in the house lol.

05.01.2022 Pizza night at the Munstas tonight. Four in all, Garlic with Balsamic Caramelised Onion, Hawaiian with Olives, Aussie with smoked Wagyu and Bacon and a Meatlover with Red Onion. Happy family with full tummies.

04.01.2022 At the Munstas tonight we had Gua Bao with Hoisin and Ginger pulled Pork. The Buns were shop bought, but honestly after finding these we wouldnt bother making our own again, they are that good. The Pork shoulder (Boston Butt) spent 9 hours in the slow cooker with fresh Ginger and Garlic, Hoisin sauce, Ginger ale, Chilli flakes, Salt n Pepper. The end result is amazing and just pulls apart so easy. Inside the steam buns we start with Vinegar based Colesaw, then top with the pulled pork, followed by some pork crackle for a nice crunch, then fresh corriander and lastly fried Shallots.

03.01.2022 Fried Chicken and Waffles tonight on the Munstas table. We soaked the Chicken thighs in Buttermilk and Spices for 4 hours before coating and deep frying. The Apple coleslaw was dressed with a vinaigrette . We made a simple Buttermilk waffle recipe. Cucumbers were pickled in a sweet vinigarette ... Chris made a Carolina golden sauce to have with the Chicken, and the kids enjoyed having some Maple syrup over their Chicken and waffles. See more

01.01.2022 Isolation tips. 1, find a 3 to 4 kilo Brisket, Cape Grim from Tasmania will do. 2, smoke for 12 hours over Iron Bark chunks until it probes like butter. 3, make some Texas Beans, Coleslaw, Homemade bread and Texas BBQ Sauce to have on the side. 4, Eat, eat, eat and repeat. 5, for dessert make a Fig and Frangipane tart with homegrown Figs.
