Ingredients:... 1 tin Jackfruit in water (you can easily find in Asian supermarkets or some health food stores) Sauce options: Jerk (Caribbean) or BBQ sauce - make your own combinations! Method: Drain, rinse & shred jackfruit Mix with enough sauce to fully moisten jackfruit Spread onto oven tray Bake jackfruit with sauce for 20-30 minutes in a hot oven, turning occasionally with tongs Once jackfruit is hot and some edges brown, it’s ready! Serves 2 or 4 smaller portions Hint: You can also fire up your BBQ to cook your jackfruit! Chop 2medium eggplants into bitesize pieces, coat with a little olive oil and place on a baking tray. Roast in oven at 180c for about 30 minutes or until tender and cooked through. Meanwhile chop 3 blanched, skinned tomatoes. In a large bowl toss together 2 large handfuls of rocket/spinach, the diced tomatoes, cooked eggplant and 1 can of rinsed and drained lentils. Dressing In a jar add 1/2 cup olive oil Juice of 1 large lemon 1 tsp orange zest 1 tsp Dijon mustard Salt & pepper 1/2 tsp minced garlic 1 tsp honey Shake well , toss enough into salad as you desire (keep remaining in fridge) .

Miso glaze:... 1/4 cup miso paste 2 tablespoons rice wine vinegar 1 tablespoon coconut sugar or honey 1 tablespoon cooking sake or water if no cooking sake Water as needed to help blend into a thick paste Cut 2 eggplants in half, then score the flesh in a cross-cross fashion, cutting almost to the skin. Lather the miso glaze mixture across the surface then bake at 200 degrees celsius for approximately 45mins or until eggplant is tender and miso is caramelised. Garnish with sesame seeds & fresh chopped coriander & chives.

Made with fresh blueberries, a natural jam oozes from the centre Ingredients ... 2 cups spelt flour 2 cups plant milk 1 chia egg (1 tbsp chia seeds mixed 3 tbsp water and left to stand for 2 minutes) 1 teaspoon ground cinnamon 1 teaspoon vanilla extract 1-2 teaspoon coconut oil (for frying) Punnet blueberries Maple syrup (optional) Method Whisk flour, milk, chia egg, cinnamon & vanilla in a bowl to make a smooth batter. In a medium-hot frypan, coat base with coconut oil and using a ladle, spoon in one ladle full of batter to make a pancake shape. Add 5 (or more) blueberries to pancake and wait for bubbles to appear on surface. Flip and cook through on other side. Repeat until batter is used up. Note: pancakes cook quickly so don’t walk away! Serve with additional blueberries and maple syrup.

04.01.2022 Nacho Cheese This is everything you can dream of in terms of taste, texture and plant-based goodness! A great recipe for a stand-alone dip or to use as your cheese topping on nachos. ... INGREDIENTS 1 medium potato, peeled and cubed 1 medium carrot, peeled and chopped into small pieces 1 small onion, halved 1/2 cup raw cashews 1/2 cup nutritional yeast 1/2 cup plant milk 1 garlic clove 1 tsp. salt 1-2 chillies (to your liking) METHOD Place cashews in a small bowl. Pour boiling water over the top to cover completely. Place diced potato, carrot and onion in small saucepan. Cover with water and bring to a boil. Reduce heat and simmer uncovered until vegetables are soft (aprox 20 minutes). Drain cashews and vegetables and add to blender. Add remaining ingredients and blend until sauce is smooth. Add extra milk as needed to attain desired consistency (thick for dipping, thinner for drizzling). Garnish as you like - we've used finely chopped coriander (cilantro), olives, red onion and tomato.
