25.01.2022 Stirfry veggies from the garden (minus carrot), with squid. I also used my #homemade fermented garlic + sambal. Ive have a bit of a traumatic afternoon. Many of you will know about my bee sting to the face + anaphylactic reaction a few weeks ago. Since then, weve had a few buzzes from aggressive bees when outside. Today, I was collecting the ingredients for this meal when one chased me. There was no way I wanted to go through what I recently went through again + two weeks ...of swelling. I ran, I could still feel her buzzing in my hair + as I reached the back of the house, in my fear frenzy, I fell and have badly strained/hyper extended a couple of toes and banged my knees. I got up, tears flowing... and ran my hair under the trough as I didnt want to risk my hand getting stung. I felt so worked up + quite anxious. Its not a feeling Im used to. I guess because I know that I could die - should I get stung and not be able to get to my epipen. Feeling grateful tonight. Oh, and 1 hour later we found her in our bedroom! I cooked the meatballs in the fryer in 15 mins. Well, they cooked themselves. Then, I popped them into the sauce + served pretty much immediately. 24.01.2022 Beef Massaman Curry - slow cooked, with chunks of potato + garnished with peanuts. Creamy, rich + flavourful, this is weeknight comfort - or great for entertaining. Quick + easy to make (cheats version);... Into a slow cooker, add 750g diced rump or chuck steak. 1 jar of Massaman curry paste (good quality, no added crap). 1/2 thinly sliced brown onion. 400g tin Ayam organic coconut cream. 2 peeled potatoes diced into chunks (same size as beef). 4 kaffir lime leaves. Splash of fish sauce. Red chilli flakes *to taste. Cook on low for 6-8 hours. Serve with steamed jasmine rice, peanuts, coriander. This curry will be even better the following day, so go ahead + prep early. I grow my own oregano + harvest when its at its best. Sometimes I hang bunches + air dry, but if I need some quickly... a couple of hours in the dehydrator and its good to go! I then strip the leaves off the stalks + blitz in my coffee grinder to get the desired consistency. Inundated with a particular herb? There is noth...ing worse than letting it waste. 20.01.2022 Zucchini + dill bread (recipe on my website). As the original recipe has some dairy in it, I omitted the goats cheese + also substituted the dill for rosemary to pack more flavour in, due to the loss felt by the cheese! I also swapped out the rice bran oil for grape seed. ... This bread is super wholesome + filling. 1 thick slice does me for breakfast. I like to cut the loaf into slices and freeze individually for when I feel like a piece for lunch or breaky. The flavours mingle so well + its something completely different on the palate for breakfast. 07.01.2022 Yorky puds. Fluffy, golden + light. Gluten free. Dairy free.... ingredients: 2/3 cup brown rice flour 2/3 cup tapioca flour Pinch sea salt Pinch black pepper 4 free range eggs 1 cup almond mylk olive oil Preheat oven to 200c. Drizzle a little oil into each component of a 6 cup deep muffin tin. Place in the oven to get hot whilst you make the batter. In a mixing bowl, add the rice flour, tapioca flour, sea salt + black pepper. In a jug, whisk together the almond mylk + eggs. Slowly pour the wet mix into the flour + whisk until smooth (the batter should be smooth + thin). Pour the batter back into the jug. Remove the greased hot muffin tin + carefully pour the batter into each muffin cup. Bake for 20 mins. 05.01.2022 Quite possibly the best meal Ive eaten in years. The flavours. The texture. Pork belly (crispy) with sticky Asian drizzle sauce, steamed rice + sesame broccoli. Im blown away. So sticky, sweet... yet crispy + salty. ... After an exciting Saturday... I was in ED after having anaphylaxis to a bee sting to the face... this was the comfort bowl I needed. So exhausted, sore + swollen. Weeding my veggie garden, I had stepped out for a break and then a little bee started buzzing around my head (she felt angry + on a mission)... until she had stung the side of my face. I knew I was in trouble as Im allergic, so I alerted hubby... almost immediately my eyes had swollen nearly shut and I started itching everywhere. Breathing was shallow + Mr B didnt hesitate in getting to the hospital stat. Thinking today, I wondered if I accidentally stood on one of her community + this made her attack? There were so many bees buzzing away in my rocket that had gone to flower, I felt happy working along side them. Anyhow, I love my girls + know they were only being protective. Im immensely humble for the experience + feel that even though Im feeling pretty uncomfortable, that something special has occurred. For the beef; I marinated a piece of rump steak in garlic, soy + white pepper. Cooked over a grill (medium/rare), then rested + sliced. ... For the zoodles; I sautéed the zucchini in sesame oil + doused in Japanese seasoning. For the pickled onions; half a sliced brown onion, 1/4 cup ACV, 1/2 tbsp coconut sugar, 1/2 tsp salt. Allow to sit for at least an hour. To serve, I drizzled with a little kecap manis + a sprinkle of white sesame. A nutritious, well rounded meal.
