Rich in silic...a to support healthy skin and hair and packed full of flavonoids to provide cellular protection against free radicals, the herb is gaining popularity for supporting beauty and health. Available as seeds or seedlings to purchase at nurseries, you can easily grow this green leafy goodness to provide a ready supply for your kitchen. Ingredients 150g baby stinging nettle 3 tbsp. walnuts or mixed nuts 1 tsp. sesame seeds 2 garlic cloves 1 red or yellow capsicum 3 tbsp. safflower, olive or macadamia oil. 3 tbsp. lemon juice 1 tsp. apple cider vinegar 2 3 hardboiled eggs Salt and pepper 1 pinch sugar Preparation steps 1. Using tongs, rinse the nettle leaves in a colander. Steam in saucepan, as you would for spinach, for 3-4 minutes until soft. Set aside. 2. Chop the nuts and toast along with the sesame seeds in a dry frying pan until golden. 3.Peel and slice the garlic cloves. Heat the oil in a skillet and cook the sliced garlic until crispy. Remove from the pan. Add the sliced capsicum and sauté until soft. 4. In a bowl, whisk the oil with the lemon juice, vinegar and sugar, and season with salt and pepper to taste. 5. To serve, divide the nettle leaves between plates. Slice the boiled eggs into quarters and scatter through the nettle. Garnish with the toasted nuts, seeds, garlic slices and capsicum then drizzle with dressing. Serve with fresh white sourdough bread.
