24.01.2022 Tropical dining as it should be - entirely open-air, palm trees overhead and unbeatable relaxed holiday vibes. Believe us when we say there truly isn’t a bad seat in the house.

23.01.2022 ? Served at Nautilus for over 30 years, its a deliciously tropical dining experience you wont forget. Dusted in light Asian spices and fried, which crisps the outside and almost steams the inside to create mouthwatering light and flaky flesh with a sweet flavour. It is served with a dressing of lemongrass and pineapple Thai caramel, chilli jam and green paw paw pickle salad.... The dish was first introduced to Nautilus by Danish-born Chef Mogens Bay Esbensen in the 1980s, whose ability to combine tropical ingredients with Thai flavours pioneered what is now considered Modern Australian cuisine. #nautilusportdouglas

If the hardest part of your day is deciding what cocktail to order, you know youre doing it right. So what will it be? Mango Daiquiri, Retro Colada, Lychee & Lime Caipiroskaor spice it up with a Chilli Margarita?



22.01.2022 ? I always thought my favourite restaurant in Australia would be in Melbourne, or Sydney, or maybe Cairns. But I was wrong. Never would I have thought Id have the best meal of my Australia trip right here in Port Douglas, in North Queensland. From the tropical outdoor seating under a canopy of Daintree rainforest, to the fresh Australian produce, to the asian fusion technique. It has been a perfect tasting menu that Ill always... remember and dare I say, worth to fly to just for this one meal. Here are some of my favourite dishes from the five and seven course degustation menu. - @findingjony : 1. Yellowfin Tuna Tartare, Lotus, soy pickled green chilli, wasabi peas & chervil. 2.Freshly shucked Oyster, w Ponzu, ginger & tobiko. 3. Twice Cooked Pork Belly & Seared Scallop, Bean sprouts, mandarin, burnt palm sugar caramel & fragrant herbs. 4. Sous-vide Moreton Bay Bug Tail, Japanese inspired Escabeche, burnt miso butter & Yarra Valley caviar. 5. Sansho Peppered Soft Shell Crab, Celeriac remolade, kecap manis, watercress & umeboshi. 6. Daintree Curry, Moreton Bay bug, local tiger prawn & baby Squid, bamboo & bok choy in a Thai red curry sauce w puffed rice. 7. Steamed Duck Dumplings, Spiced duck consomm, sesame, hoisin & Shitake mushroom. 8. Mango Souffl, Mascarpone, tropical fruit salsa & macadamia crumbs.

20.01.2022 Oh how our little Port Douglas has changed. First established in 1877 after the discovery of gold nearby, Port Douglas has seen its share of ups and downs. Falling on quiet times after the 1911 cyclone, the population dipped to around 200 people before tourism (and Christopher Skase) came in to revive it in the 1980s.... And now? It’s the perfect escape. Somehow a combination of sleepy fishing village, millionaire’s playground, backpacker haven and tropical holiday retreat all rolled into one. #portdouglas #throwbackthursday

01.01.2022 Soak in the tropics with a true Far North Queensland seafood delight. An elusive local delicacy, mud crabs burrow themselves deep within the mangroves of the coastal rivers and estuaries along the Queensland coast. Our crabs are sourced from the Gulf of Carpentaria, stretching from Cape York to Arnhem Land in the Northern Territory.... The mud crab is cleaned and shells are partially broken to allow the sauce to enter when cooking. Wok tossed and then left to simmer and steam until its bursting with flavour.
