23.01.2022 Having not been in the kitchen all week Ive missed pottering around so decided to treat myself to a potato, pea and cabbage curry. My curries are quite involved and Im not shy in adding spices. Its also a longish process where I like to seperate the oils over a period of time to enhance the flavours more. So its not the spur of the moment request. This dish has 15 spices with a tempering technique (picture below) to really draw out the oils, flavours and richness that a good curry deserves. All up this dish contains 20 ingredients. A little excited.



23.01.2022 Peanut satay chicken. I don't normally put veges in my Satay. But because of the length of travel for my clients I thought they could do with some extra nourishment. It's super creamy and a little spicy. And this dish contains no onion or garlic per request. 21.01.2022 Xo noodles with mushroom sauce radish and kimchi and steamed broccoli vegetable risoni with pearl barley, red lentils and yellow peas and vegetables red bean and vege balls in a masala sauce roast beef in a red onion gravy, creamy mash and minted Peas with garlic chives.

20.01.2022 A little addicted to these tasty morsels. I thought I would add my recipe for anyone who would like to make these for a quick snack, easy meal or to take a fancy plate to your mates house for movie night BBQ or simply take for yourself . Enjoy!! Fried rice cakes. ( yields 5 cups of rice) 2 cups uncooked glutinous white rice (sushi rice)... 3 cups water cup rice vinegar 1 tablespoon vegetable oil 1/4 cup white sugar 1 teaspoon salt 2 TBL sesame seeds 1/4 soya sauce condiments of choice: wasabi, pickled ginger, mayo, seaweed salad, toona Method Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle. In a small saucepan, combine the rice vinegar, oil, sugar and salt. Cook over medium heat until the sugar dissolves. Cool add sesame seeds then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools. spread the rice out into a greased square or oblong container and ideally chill over night. (You want the rice as dry as possible) if not place in freezer to completely cool. slice into desired sizes and heat oil in a non stick pan. Gently place your squares in the oil being careful they dont touch or they will stick. Cook for a few minutes each side to get a nice crispy edge. while they are cooking pour your soy sauce into a medium sized container. remove each rice cake and dunk both sides into the soy sauce and carefully (they will splatter) place back in the pan and cook for a further few minutes each side. remove from pan straight to serving plate and add a dash of salt and your desired condiments. ENJOY

20.01.2022 After looking after everyone I thought Id have a little self care myself. There is no right or wrong time for smoothie bowls and I felt like a massive bowl. I made some tapioca balls some biscuit dirt and some amazing coffee whip youll see top left of screen. Then added some fruit painstakingly cut . Viola The Rustic Bowls version of a smoothie/dessert bowl. Have a blessed evening.

16.01.2022 Hi guys. I know how hard it can be finding good premium vegan products! But today I shot over to my local FoodWorks Burleigh Waters and there was a lovely rep stocking up their ever growing vegan selection. I don't know what products they selected but honestly they are the nicest people who are really trying to make a difference so if you're over this way pop in and see what they have. This is the little sample pack the rep gave me and I had to try the Kimchi/sweet potato burger patties .... Oh my!!!!

16.01.2022 A shout out to the wonderful owners at Foodworks Burleigh. These guys are the kindest most community orientated shopkeepers I have met. They know all of their regular customers by name and make you feel special greeting you personally as you walk in. Sadly some don't agree and have targeted them 3 times with ram raids over the last 2 months. I noticed the smiles not as bright and understandably. So a dose of cupcakes for them tomorrow to show that there is kindness. If you are around Christine Ave pop in and show them some support. 15.01.2022 Im so in love with this curry right now. Bengali cabbage and potato curry with the addition of peas. Its vibrant and creamy and Ive toned down the spice demons to allow for the not so curious palettes . My beautiful Indian friend used to make me the most amazing curries but Id be a hot mess afterwards trying to figure out what hit me. So a mid range heat I think would be best. Although it contains 12 herbs and hand blended spices it is rounded off with the coconut cream and soft pillowy potatoes.

14.01.2022 Moong Dahl Tadka.. Dahl is in many ways the perfect staple. Comforting warming nourishing and filling. But there are so many ways these versatile lentils can be cooked and flavoured. I've cooked them using the traditional tempering of the spices to allow the full flavour to develop. But in true Rustic style fashion I added my own flair with red onions and chilli oil. Not only are they the loveliest people they are doing their best to introduce a great selection of vegan products. You should see the ice-cream selection!!! These little treats were amazing.

Every week I get introduced to a new item and this week is GF, Egg free and Dairy free Tiramisu Biscuits. I think there was 3 flavours by memory . 03.01.2022 Who has heard of the magic coffee whip? Ive been playing around with it and discovered it makes the most amazing coffee frappe. And as I had some tapioca pearls in the cupboard I decided to make a bubble iced coffee frappe... it was so delicious. Half the fun is sucking the bubbles up!!

03.01.2022 Lasagne is one of the most popular go to dishes. Its rich in flavour and texture and its comforting. Although it can be a time consuming dish depending on the elements and quantities its worth every minute spent. This week we have tvp mince layered with pasta, eggplant , almond ricotta and topped with a mozzarella sauce and parsley.
