09.01.2022 Sugar and spice and all things nice, makes a pulled pork the family will crave for. Here is our pulled pork recipe step by step so you can’t fail. Step 1 - Rub a generous amount of our Carolina rub over a pork scotch... Step 2 - Preheat oven to 160c and roast in oven until golden brown approx 1.5 hours Step 3 - Wrap tightly in foil and place back in oven until tender approx 4 hours (Tip: Use a skewer to test tenderness) Step 4 - Let the pork rest for 1/2 an hour Step 5 - Pull the meat using forks or tongs and add 150ml of your favourite BBQ sauce. 07.01.2022 If roast beef is on the menu, you cannot get much better than Nino & Joe’s dry-aged grass-fed eye fillet. Trimmed and hand tied by one of our expert butchers If you really want to make sure your roast game is on point when taking one of these home, use the following two methods when cooking: Method 1 - Sear and Roast First things first, season well with salt and pepper then heat some oil in a pan. Sear until you get a nice golden crust on all sides.... Then place in the oven on 180 degrees centigrade for 25-30 minutes remove from oven then let rest for 10 minutes slice and serve. Method 2- Reverse Sear Same as the last method start by seasoning well with salt and pepper. But this time, place in the oven for 40-50 minutes on 100 degrees centigrade. Then heat some oil and butter in a pan with a clove of garlic add some sprigs of rosemary and thyme and sear in pan until you get a nice crust all round, then cut and serve. I highly recomend buying a meat thermometer so you can get perfect results every time. Internal temps should be. Rare- 120F to 125F, 45C to 50C Medium-Rare- 130F to 135F, 55C to 60C Medium- 140F to 145F, 60C to 65C Medium-Well- 150F to 155F, 65C to 70C Well Done- 160F and above, 70C and above
