05.01.2022 Scallop Manti - Manti is a dish from the north of Greece. European traders would cross the northern part of Greece which was the corridor to Asia in search of spices silk and other commodities to trade. During their journey they would be influenced by the cultural and culinary habits of all the villages and towns that they would visit which would in return inspire them to implement these habits into their own traditional way of cooking. Manti can be produced with a great number of fillings; in this dish we have used scallops to incorporate the great love Greeks have for shellfish which are still collected by free diving around the Greek coast.
