25.01.2022 Flashback today to this day in August 2016 when we went on a camel ride on a perfect Broome beach day. It was so much fun. Broome is definitely on my list for another visit. Breathtaking place to visit and so much to do and see there! Other places on my bucket list are Cape York and travelling the coast of WA. A soybean-based fermented food popular in Japanese cooking, you've probably had Miso from a Japanese takeaway, Japanese cafe or restaurant. Miso is best known as the primary ingredient of miso soup, but its also used as a sensational instant flavour foundation, imparting a umami taste in soups/broths, salad dressings, vegetables, stews, glazes and marinades.... As a fermented food, miso provides the gut with beneficial bacteria and is a source of copper, manganese, vitamin K, protein, and zinc. A note that soy products are widely produced from genetically modified (GM) soybeans, so its a good idea to make sure the miso you choose is organically grown, not from genetically modified soy beans. 23.01.2022 Sunday baking inspiration? How beautiful is this banana peach loaf?. Recipe below if youre keen to bake today?... #Repost @hala_shares on insta Banana peach loaf by @sculptedkitchen Happy Friday!! . . Ingredients: 1 3/4 cup of flour 1/2 cup of oat flour (blended whole oats) 2 tsp of baking powder 1 tsp baking soda 1/2 cup of brown sugar A pinch of salt 1/2 tsp of cinnamon, 3 medium VERY ripe bananas 1 cup of plant based milk with 1 heaping tablespoon of fresh lemon juice. Leave aside to curdle. 1/2 cup of coconut oil, melted. 2 T of vegan butter. 1 large peach - diced into small pieces. Preheat oven to 350F. Method: Mix all your wet ingredients and mix well. Mix together your dry ingredients and mix well. Fold your wet ingredients into your dry, mix thoroughly. Fold in your diced peaches. Line a loaf pan and grease the sides. Using parchment paper prevents the sides from getting brown/burnt whilst cooking. Cook for 75 minutes. For the icing, use store bought cream cheeze, mixed with 1/2 cup of icing. See more

20.01.2022 Fermented food no.3 Milk Kefir A cultured, fermented milk drink, milk kefir is similar to yogurt, but thinner in consistency with a tart, sour taste. Milk kefir provides a rich source of probiotics and can be made with whole cows milk, goat's milk, sheep's milk or coconut milk. The Kefir grains used contain a variety of bacteria and yeasts and resemble little blobs of gelatin in appearance.... It's easy to make. Place grains into a glass jar or bowl. Cover them with the milk and leave them at room temperature for a minimum 24 hours, where the bacteria and yeast ferment the milk lactose into lactic acid, which is what activates the bacteria to grow. Once ready, you simply strain the kefir from the grains and repeat the process again with a fresh amount of milk. The grains will multiply as long as they are kept in fresh milk at an ideal temperature of approximately 22-25C. Enjoy the strained kefir as a drink, over your muesli/granola or in your smoothies. Once your source grains, its actually a very easy to make probiotic food. Try sourcing milk kefir grains locally, perhaps via a good health food shop or you may find people in your local area via google search who are happy to give their milk kefir grains away or sell them at a small cost. 19.01.2022 National Stroke Week raises awareness around preventing strokes, saving lives and enhancing recovery. Do you know what a stroke is? A stroke happens when blood supply to the brain is interrupted. Here are some stroke stats... -Every ten minutes an Australian will have a stroke. -Stroke costs the Australian economy $5 billion a year. -Stroke is one of Australias biggest killers (it kills more women than breast cancer and more men than prostate cancer). -When a stroke strikes, it attacks up to 1.9 million brain cells per minute. -More than 80% of strokes can be prevented. There are two simple steps you can do to help prevent a stroke. 1.Make time for a health check for stroke risk factors. Contributing chronic diseases include high cholesterol, Type 2 diabetes and atrial fibrillation (irregular heartbeat). Common heart disorders like heart disease can increase your risk for stroke, as a result of plaque build up in the arteries, which can block the flow of oxygen-rich blood to the brain. We tend to associate heart disease with males, yet heart disease affects more women every year than breast cancer. Female hormones play a protective role in the heart until menopause occurs so if you have reached menopause or it has occurred early, the risk of heart disease starts earlier too. Women need to be very much aware of heart disease as they are of breast cancer. 2.Taking charge of your own health and living a healthy lifestyle. This includes staying active, eating nourishing foods to support a healthy body, not smoking and if you drink alcohol, drinking it in moderation. A family history of heart disease is also relevant. 19.01.2022 With life for us in lockdown again here in metro MELBOURNE, this is what we look like! Beanies on and out for a walk in the very crisp of evening. I know how challenging this is for everyone, and even more second time around. Im not happy about it, but I for one dont want to see this thing get out of control. So that brings me to food, nourishment and immunity. Use this time to try out new recipes that can change things up for you in a more regular normal once we are in m...ore control of this beast. It seems from what Im seeing, that people have a little more time on their hands. Pick 1-2 new recipes a week, preferably with ingredients that can support your immunity and general health. Choose nutrient dense foods over the ones that give you nothing or very little in the way of nourishment. Look after you and your family as best as you can in these challenging time. Keep it simple. Last night we had the BEST minestrone soup for a delicious meal with home made pizza. It was insanely delicious. 17.01.2022 Michael Pollan once described sourdough as the proper way to make bread. And I would have to agree. Sourdough bread has certainly risen in popularity for many whilst #stayinghome. One of the oldest forms of grain fermentation, it dates back to ancient Egypt and was the customary form of bread making until bakers yeast replaced it a few centuries ago. Traditional sourdough fermentation relies on wild yeast and lactic acid bacteria to give bread its rise and is a... tastier, healthier and more digestible option than conventional bread. The lactic acids in the bread: - makes the vitamins and minerals in the flour more available to the body by neutralising the phytates in flour that can interfere with their absorption. - slows down the rate at which glucose is released into the blood-stream, so those undesirable spikes in insulin can be avoided - sees the gluten in the flour as more digestible and less likely to cause food intolerance for many who experience gluten sensitivities. So it would seem that sourdough bread may be a great alternative to conventional bread for many. Personally I have enjoyed including a slice of the sourdough Ive been making at home with my eggs for breakfast. What about you? How do you like to have your sourdough? 16.01.2022 Sauerkraut A fabulous and simple way to add some friendly bacteria to your gut! Sauerkraut is a type of fermented cabbage which you can be found at all good supermarkets, greengrocers and farmer's markets. Its not always easy to find fresh sauerkraut in stores, but please dont get 'caught out' by buying a pasteurised version in the non-refrigerated sections. That pasteurisation process destroys all that beautiful bacteria, so its just not the same as the refrigera...ted version! Or you can make it yourself - it's so easy. Keeping it simple, grab a fresh organic cabbage (organic is best when it comes to sauerkraut) and salt (good quality salt like a celtic fine salt). You literally 'massage' the cabbage to release its water content. Spoon into your storage jar, push down contents it sits under the liquid (important it stays submerged) and let the cabbage do its fermenting. The storage temperature will determine how quickly fermentation takes place. Once you have got the hang of it, consider adding colourful vegetables like carrot, kohlrabi and beetroot. Add in freshly minced garlic, chilli and turmeric to resemble what I call a kimchi Kraut. Enjoy it with your eggs, stews and atop some fresh sourdough bread spread with avocado and freshly sautéed myshroom. Start small with a teaspoon and gradually increase to 1-2 tablespoon at each meal. 14.01.2022 Do you like a one tray bake? They are such an easy way to cook up a meal in winter and vegetables taste so good roasted at this time of the year! This recipe from the lovely Karen Martini is a standout winner. It's super easy to pull together in no time at all and it's ingredients include turmeric which is known for its anti-inflammatory properties that help boost immunity - we can all do with that at this time of the year. One tray bakes are fantastic for throwing a whole... lot of bits and pieces together too. So if you find yourself looking at the vegetables that are left just before shopping day, try cutting them all up and adding some healthy fats and protein in and bake away. 14.01.2022 I have the healthiest caterpillars in my veggie garden because they keep eating the kale I am trying to grow! Seriously yesterday I removed close to ten very healthy looking caterpillars! But if I was them I’d be eating the beautiful looking Kale too. Clearly they know what’s good for them! This week is National Nutrition Week and the focus this year is vegetables! Yes encouraging YOU to eat 5 serves a day. Did you know that just 7% of Austrlian adults and 5% of c...hildren meet the recommenced guidelines for 5 serves a day? In fact the average Aussie eats only as half as much vegetables as they should. This year’s theme is Try For 5 whilst doing your bit to embracing vegetable waste. Try filling your plate with sustainable foods that have the power to improve your health and the health of the planet - I do love that concept! I’ve been growing some vegetables and clearly the caterpillars agree with what I am doing by eating my kale! So often clients ask me what a serve is. Well this is what it looks like: 1/2 cup cooked green or orange vegetables (broccoli, spinach, carrots or pumpkin) 1/2 cup cooled dried or canned beans, peas or lentils 1 cup green leafy or raw salad vegetables 1/2 cup sweet corn 1/2 medium potato or other starchy vegetable (sweet potato, taro or cassava) 1 medium tomato How do you tick off that serving of 5 in your day? 13.01.2022 VEGGIE INSPO. How can you get more veggies in your healthy eating plan, because we are not eating enough of them! I’ve got nine ideas for you to try: 1 Snack. Vegetable sticks like carrot, cucumber and capsicum go perfectly with a delicious home made dip. You can even create a vegetable dip like a pumpkin hummus or a spicy capsicum for more veggies! 2 Side salad. Such an easy way to get those leafy greens into your day! 3 Soup. Make vegetable soup and use up the... last of the vegetables in the fridge. I love a cauliflower, broccoli and garlic soup with fresh sourdough bread! 4 Pasta alternative. Grate or spiralise some zucchini and carrot and mix with your pasta sauce for dinner. Make it more delicious with a freshly minced garlic clove minced in the sauce just before serving! This is delicious. 5 Roast them. Cut up a variety of veggies and roast them. You can then have them at the ready for frittata, salads, dips and adding into a curry 6 Breakfast. Instead of just waiting for dinnertime to eat your veggies, aim to add some spinach or other leafy greens into your breakfast meal. Think spinach, zucchini or kale with with eggs or add it into your smoothie. 7 Cake. Don’t we all love cake? Ever tried chocolate cake made with zucchini or beetroot? Give it a go. It makes for a very moist and delicious cake! 8 Frozen. Always have frozen veggies on hand in your freezer. These veggies are just as nutritious and means you always have veggies at your disposal if you havent had a chance to shop or are just running low 9 Platters. Kids and adults love a platter they can pick from. Make it up and follow the rainbow philosophy. Choose vegetables from the colour of the rainbow and you’re assured a dose of phytochemicals which are potent disease fighting chemicals. Winning! 09.01.2022 If I can cook a real simple food meal in the dessert out of a camper kitchen imagine what simple real food meals you can cook at home? This is me in mid August 2016 on the Tanami track. Its a long stretch of road in the Tanami Desert, which is situated in the Northern Territory and Western Australia. It provides a shortcut between WA and NT. We did two night stops whilst driving and we cooked up a storm and watch the tv (aka the star filled sky) by the fire afterwards. Th...is particular night we had cooked up frozen greens, bangers and mash and even whipped up a gravy to match! Meals dont need to be hard. I always suggest to keep it simple if you are finding all the messages out there confusing. Stick to meat and veg from real food as the base for your meals everyday and you are set! Tonight we are doing just that! What are you cooking??

06.01.2022 COFFEE - I so love it! But for many it can have a H U G E impact on their sleep? Did you know it takes caffeine around eight hours to be cleared from the body? Ever thought that maybe your coffee consumption could be the culprit for why you may not be sleeping restoratively? ... I know. Its different for everyone. Dont you hate it when people say they can have a coffee at 8pm (!!!) at night and it has absolutely no effect on them! I mean really!! For many though, that late arvo coffee or over consumption through the day can really muck up your sleep. Is that coffee you had at 2pm messing with your sleep? Pay attention to how it affects you. Cutting back could really make a difference. For me, I swapped out real coffee for water filtered decaf coffee and that helped heaps! 06.01.2022 Sleep Awareness Week - Never has there been a more important time to make sure we are getting restorative sleep Poor quality sleep can increase your risk of obesity, Type 2 diabetes and heart disease while also negatively impacting your mood, concentration and memory. Weve all heard the saying theres plenty of time to sleep when youre dead. Dont believe it! Research tells us that too little sleep can be devastating to our brain, body and microbiome. Research in...dicates women are not sleeping well! The Sleep Health Foundation tells us that significantly more female respondents than male respondents reported often or always worrying about getting a good nights sleep (31% vs 21%) and being overwhelmed by thoughts when trying to sleep (35% vs 25%). Tip #1 - The quality of the food you are eating impacts your body and your sleep. If the majority of your food intake is coming from highly processed, transfats (deep fried foods, cakes, biscuits, processed foods and deep fried foods) and sugary foods like sugar laden muesli, you may need to reassess just how much you are consuming. These foods dont support optimal body function, which means youre not doing much to assist your sleep quality. They also impact your gut health - this is important because serotonin, the hormone that makes melatonin our sleep hormone, is produced in the gut. If you are not getting quality sleep it could also be due to your melatonin production. Interesting stuff hey? 02.01.2022 Yesterday marked three weeks, 21 days, that we have been in stage 4 lockdown here in Melbourne. So I reflected on what this time means to me this morning and this is what I came up with: - Family time with my husband and boys. Im not sure I will ever get this 24/7 time with them ever again (unless we go into another lockdown!)... - Cauliflower. I have always loved this veggie but we have roasted it and popcorn cooked it and its become a winner at home. - New recipes. We have tried out new recipes and created some new family favourites that will be handy when we get back to a new covid normal. Nothing like changing up the family meal plan options right? - New cooking skills. A slower pace means more time to teach my kids kitchen skills (aka life skills). My eldest has become a gun at making roti for our curries and mastered butter chicken. My youngest is a work in progress but he has mastered the making of a won ton. - Learning to make sourdough bread. Yep I know everyone has jumped on the bandwagon with this one, but seriously is there nothing better than the smell of sourdough in your house? I havent purchased bread for about four months I think and my kids love it. And because its a fermented product, bonus points there. - Popcorn. Mastered the art of having very little unpopped kernels in the saucepan at the end - its always evaded me! What (hopefully) positive things has this time brought up for you? 01.01.2022 Everything’s crossed I’m crossing my fingers as we anxiously wait details of what’s going to be relaxed here in MELBOURNE tomorrow. After almost 11 weeks in lockdown of being restricted to a 5km radius distance, I am looking forward to hearing what’s about to change so we can get out and start being MELBOURNE again! My heart goes out to all those businesses doing it so tough. I know that Melbournians are ready to support you! Together we can get back to a covid normal an...d get back shopping, holidaying and catching up with those that we love!
