24.01.2022 FLUFFY PANCAKES Last Sunday Brunch! These bad boys will keep you full until dinner x) Heres the recipes:... INGREDIENTS 1 cup of oat flour 1 tsp baking powder 1pinch of salt 2 large eggs 1 medium banana, mashed 1 teaspoon vanilla extract 2 tbsp melted coconut oil/ butter INSTRUCTIONS Begin by placing dry ingredients into a medium bowl. Whisk until combined.Then, mash bananas in a large bowl. Add eggs and vanilla and whisk until combined. Transfer dry ingredients into wet and mix until combined. Finally, add in melted coconut oil and mix again until combined. Heat a large skillet over low/medium heat. Spray with coconut oil cooking spray. Spoon on about 1/3 cup of batter and let cook for 2-3 minutes on each side. Repeat.

10.01.2022 The addiction is real over here!!! Sinking my teeth into these yummy rustic BOUNTY bars! Ingredients: 1 1/2 cups unsweetened shredded coconut... 3 tablespoons full-fat coconut milk 3 tablespoons coconut oil melted 2 tablespoons honey or maple 1 1/4 cups 70% dark chocolate chips Instructions: Add the coconut, coconut milk, coconut oil, and honey, to a food processor. Pulse several times, until the coconut mixture is blended but still has texture. You should be able to pinch the filling and it will hold together, but still be a bit crumbly. Take two tablespoons of the coconut mixture and form a bar shape, and place it on a parchment paper lined baking sheet, you should get about 8 bars. Pop the tray into the freezer to firm up for 10 minutes. While the coconut is firming up, melt the chocolate chips in a the microwave. When the coconut bars or balls have become firm, drop them into the melted chocolate one at a time and use a spoon and fork to cover the bar. Shake off excess chocolate then place back on the parchment-lined baking sheet. Repeat with all of the coconut bars. Pop in the fridge or freezer to set the chocolate. Once set, store bars in an air-tight container in the fridge for up to a week. 10.01.2022 POST WORKOUT NUTRITION You may not need a meal after a 30-minute walk at the park but you may need one after a hard workout at the gym, a long trail or an intense exercise session. Your body needs to recover properly and a post workout meal/snack helps refill the energy stores you burned off and provides you with enough protein to prevent muscle protein breakdown and stimulate muscle synthesis. When we exercise, our body utilises metabolic fuels such as glucose, fatty acids a...nd amino acids at a much more accelerated rate than when at rest. Our muscles use up glycogen, a form of sugar that is stored by our muscles and liver, as energy. After a workout we are leaving our body in a depleted state, resulting in a catabolic environment (breakdown of molecule for use as energy) which is not optimal for those looking to build muscle. Furthermore, whilst in a catabolic state the body is unable to partake in anabolic processes (centres around growth and building) such as replenishing glycogen or protein synthesis. This is why we want to spend as little time as possible in this catabolic environment, and that explains the importance of post workout carbohydrates along with adequate protein. The protein you consume is going to replenish your amino acids and rebuild your muscles. Carbohydrates will benefit your overall recovery and muscle growth: Replenish glycogen stores that have been depleted during training. Stop catabolism environment by secretion of insulin by your pancreas. As a results Insulin release will not only enhances glycogen uptake, but also reduce cortisol, increases amino acid utilisation and allows carbohydrates to shuttle all the nutrients to the muscle tissue at a much more rapid rate, hence leading to better recovery and enhance muscle protein synthesis. Ingredients: BISCUIT 3/4 cup buckwheat flour ... 1/4 cup almond flour 2 tbsp of honey 1/3 cup raw cacao powder 75 g ghee, coconut oil or butter 1/4 cup almond milk or milk of your choice GANACHE 75g of chocolate (I used dark) 1/2 cup coconut cream CHOCOLATE COATING 100g dark chocolate chopped into small pieces 1 tsp of coconut oil Instructions: Preheat the oven to 180C and line a tray with baking paper. Ganache: Using a saucepan heat coconut cream until you see small bubbles forming at the bottom of the pan. Turn off the heat, add the dark chocolate and put the lid on. Wait 5 minutes, then stir well until all the chocolate melts. Transfer the mixture to a small bowl and cover it with cling wrap. Pop into the fridge for at least 2 hours to set. Biscuits: Place all ingredients in a food processor bowl and process to make a firm dough. Transfer the dough to a lightly floured work surface and knead until smooth. Roll the dough out between two sheets of baking paper to make a rectangle (about 5mm thick). Cut into 16 equal sized smaller rectangles. Transfer to the baking tray and bake in the oven for 10 minutes. Remove the biscuits from the oven and allow to cool. Once cooled, spread a thin layer of ganache over eight biscuits and top each one with another biscuit, sandwiching them together. Place in the fridge while you make the chocolate coating. Chocolate coating: Melt the chocolate slowly in a microwave with the coconut oil. Dip each biscuit sandwich in the melted chocolate and place on the baking paper. Return to the fridge to set before serving.
