KIMCHI... 1/2 Chinese Cabbage 2 tbsp Himalayan Salt 1/4 Cup Rice Vinegar 2tbsp Minced Chilli Paste 1 Red Chilli Sliced (Optional) 1tbsp Korean Chilli Powder or Flakes 1tsp Minced Garlic 1 Inch Knob of Grated Ginger 3 Shallots 1/2tsp Kelp Flakes 1/4tsp Tamari Remove the core of the cabbage and cut into one inch pieces. Toss the salt through the cabbage and put into a colander to sit for 24 hours at room temperature. Rinse some of the salt off the cabbage and drain remaining liquid, squeeze if necessary. In a bowl, mix the remaining ingredients then add in the cabbage. Put into a jar and leave at room temperature for 24 to 48 hours before putting in the refrigerator. Leave in the fridge for a few days to ferment before using.
