24.01.2022 Sunday lunch super salad made by our resident salad queen @ninalhoops (aka eldest daughter) . Recipe: Salad... head of lettuce 1 pack satay tofu, cubed 1 head of broccoli, chopped and roasted with salt and pepper 1 carrot, grated 1 tomato, cubed 1 small cucumber, cubed 1 tbsp fresh basil, chopped 1 tbsp fresh coriander, chopped Dressing 1 handful cashews cup water tbps sriracha 1 tsp fresh basil, chopped 1 tsp fresh coriander, chopped . . I created this granola because I found so many of the granolas out there were so high in sugar, and I just didnt want to heavily sweet breakfast. I just heard on the news that Both Woolies and Coles have recorded 15-20% increase in revenue during COVID 19 while small businesses are closing. The local shops really need our support. . .... 18.01.2022 Super Salad in 5 minutes? You betcha! . Its never been easier to get your greens in. Even your local supermarket are making it super simple to make better choices. . .... For example today I was feeling a little guilty about indulging in a cocktail or two and pink bubbly (heck its Xmas right?!) so instead of a high simple carb lunch I got this sorted in 5 mins. Really! . . I cheated by buying the Cole prewashed Superfood vegetable mix (cabbage, carrot, beetroot, kale, daikon radish and celery) for all of $3. (Enough for 2 serves). . Then I pimped it up with red onion, ripe avocado, tomatoes, marinaded tofu pieces, fresh basil leaves, green olives and a splash of olive oil and balsamic . The lot cost me under $12 and theres enough for tomorrows lunch too. . And now having finished it, I feel ready to take on the afternoon rather than fall in a heap. Its upped my energy . . 11.01.2022 This is what happens when you combine a whole lot of foods that are considered yuk by some people. . You get an absolutely YUM result! . .... Whats in this dish? Tempeh, brussel sprouts, mushrooms, kale, zucchini, garlic, tahini, lemon olive oil, & salt . . Whats the recipe? . Start by frying up chickpea tempeh in a little olive oil and garlic. Set aside. . Chop up Brussel sprouts, mushrooms, zucchini and kale. . In a frypan add 2 cloves of garlic chopped and olive oil. Cook until slightly golden. Add zucchini and Brussel sprouts. Cook till soft. Add mushroom and kale. Stir in for a few minutes. Squeeze 1/2 lemon and add salt to taste. . Serve in a bowl with greens at the bottom, tempeh on top and drizzle with tahini Enjoy! 08.01.2022 Looking for a delicious winter dish to warm your belly? . This has been a staple in our family forever and its such a simple meal to make that everyone will love. Riso e Fagioli recipe:... 1 onion, diced 3 garlic cloves, diced 1 x 400g tin borlotti beans 1 x 400g tin tomatoes 1 x medium size carrot, chopped 1 x zucchini, chopped 1lt vegetable stock 1 cup white rice 1/2 cup red lentils 500 mls water 2 tablespoons olive oil thyme, to taste salt & pepper Method: In a large pot, fry up the onions and garlic in olive oil until golden. Add the tomatoes and cook together. Then add the carrot and zucchini. Add vegetable stock, 500 ml water and thyme. Bring to a boil. Add rice and red lentils. Stir to blend well. 06.01.2022 Sharing my delicious pasta dish from last night. How yum it was! . I’ve been trying out the @orgranfoods gluten free pastas to see how they taste compared to regular pasta and their range is great! . I’m not necessarily totally gluten free but I find my tummy can get a bit bloated when I hit the gluten hard so this is a great alternative ... . I used the Kale, quinoa and brown rice penne in this dish and seriously, it was delicious . The pasta sauce was kinda of like a puttanesca but with added asparagus (they’re in season and I had some in the fridge) and zucchini. Topped with vegan feta . 06.01.2022 Sunday night dinner is this delish Beetroot soup . . If youve never try this kind of soup before, you are going to be in for a real treat .... Recipe: 3-4 large beetroots, peeled 2 medium size potatoes, peeled 200-300g of pumpkin, 4-5 pieces garlic, diced 1 leek, sliced 1 large knob of ginger 1 litre vegetable stock 400g tin of coconut cream Olive oil Salt and pepper to taste Method: Cook up leek, garlic and ginger in olive oil in a large pot until cooked. Roughly chop up the beetroot, potato and pumpkin, add to the pot and top up with the vegetable stock. Bring to the boil and cook for 20 mins. Add salt and pepper. Once veggies are soft, use a stick blender, potato masher or your regular blender to blend to a smooth consistency. . Serve with natural coconut yoghurt! . 02.01.2022 Making healthy choices is more important than ever at the moment. It can also be super hard because when we feel stressed, we tend to go for the easy options. They are usually over processed and void of nutrients. . . This is a green bowl of goodness that helps boost my immune system and tastes delicious! .... . Simple add tons of garlic and ginger in a large fry pan and cook to get the aromas filling the house. Add some leek. Cook until all golden. Add a big bunch of kale (or any leafy green you like), chopped up zucchini, green beans and stir in. A few dashes of tamari sauce adds a salty liquid booster. . . In a side pan, add olive oil and garlic. Cook till golden. Add a pack of tempeh or tofu. Cook evenly. As whatever spices you like here. I like making them VERY garlicky! . Add the cooked tempeh to the green mix and stir in well. Serve with a drizzle of tahini and sea salt . .
