25.01.2022 Our new decanter arrived in Peru today. We have unwrapped it since I took the photo, and it is a 10 tonne per hour Alfa Laval Sigma. In Australia we have just taken delivery of a 5 tonne per hour Alfa Laval Y8. Both decanters give superior extraction and will give us a competitive edge as an olive processor.

22.01.2022 Lots of flower buds at Kialla, so we are hoping for a great crop next year.

22.01.2022 One of our challenges at this time of the year is trying to estimate our crops. Kalamata (pictured) is particularly hard to estimate as the trees are big, with masses of foliage, and much of the fruit is in the interior of the tree. Usually we have more of it than we estimated. Let's see if this year will be any different.

21.01.2022 If we can share an olive oil processing secret, olive mills run on good coffee! Our mills in both Australia and Peru run on Pod and Parcel’s coffee. Roasted in Australia but enthusiastically adopted by our Portuguese and Italian olive oil makers.

20.01.2022 Olio Nuovo !!! Oasis Olives

17.01.2022 Fresh extra virgin olive oil from our coratina trees!

17.01.2022 Our olive harvest is under way in South Australia!

17.01.2022 Really interesting article from New Scientist. Towards the end of the article it discusses the value of a 'food matrix', where for example, consuming fruit or vegetables (a tomato in the example give) together with olive oil increases the absorption of nutrients. https://www.newscientist.com//mg24032060-100-the-truth-ab/

14.01.2022 It's cold this morning on our Kialla grove!

12.01.2022 Harvest well under way

11.01.2022 We're in the middle of pruning now, but in amongst the olives there are some magnificent eucalypts that we don't touch.

10.01.2022 We started our olive season in Kialla today, processing lovely green signore. In Peru Alberto has already been managing the harvest and the mill for weeks. This year we have supplemented our team of Peruvian hand pickers with a couple of Pellenc shakers.

04.01.2022 As a professional cook, caterer, and recipe developer in NYC, I am always on the hunt for the freshest and best-quality ingredients. There is simply ...nothing available for purchase online, or in any specialty market anywhere, that comes close to the quality of your olive oils. Every season I eagerly await my next shipment of your olive oils, and each time I am surprised and delighted. Your oils are my go-to condiment of choice and my secret weaponI use them to finish almost every dish I make. Their vibrancy and freshness make everything I cook come alive. - Jill P., New York, NY

02.01.2022 We have had quite a few messages asking whether the fires presently burning in Australia are affecting us. The answer is no, the very serious fires are a long way north of us. However it is also extremely dry here and we haven't even started what could be a long summer. Today there was a small fire very close to us and I took this photo from our olive mill. Fortunately the country fire service must have been on to it quickly and it looks well under control. You can see from the photo just how dry the land is.

02.01.2022 Our olives (harvested when mostly green) have an oil content of about 15%, so effectively 85% of what goes into the oil mill comes back out as waste. A bit over half of this is water, and the rest is a mix of crushed olive pit and flesh. We send it back where it came from, spreading it under the trees to recycle the important nutrients.
