23.01.2022 GINGERBREAD HEARTS Its the season to be jolly and what better way to be more jolly than stuffing your face full of Donna Hays Gingerbread Hearts!!!! If you looking for a cost affective gift, that still has that heart warming, wow factor, why not make some gingerbread bread!!! Straight from the Donna Hay website here are the ingredients for these beauties: 125G UNSALTED BUTTER, SOFTENED CUP (90G) BROWN SUGAR CUP (230G) GOLDEN SYRUP ... 2 CUPS (375G) PLAIN (ALL-PURPOSE) FLOUR, SIFTED 1 TEASPOON BICARBONATE OF (BAKING) SODA, SIFTED 2 TEASPOONS GROUND GINGER 1 TEASPOON MIXED SPICE Place the butter and sugar in the bowl of an electric mixer and beat for 68 minutes, scraping down the sides of the bowl, until pale and creamy. Add the golden syrup, flour, bicarbonate of soda, ginger and mixed spice and beat until the mixture just comes together to form a smooth dough. Divide the dough in half and refrigerate for 30 minutes. Roll each piece of dough out between two sheets of non-stick baking paper to 5mm thick and refrigerate for 30 minutes or until firm. Preheat oven to 160C (325F). Using a 3.5cm heart-shaped cookie cutter, cut out 80 hearts, re-rolling the dough as necessary. Using the tip of a 3mm piping nozzle (or a skewer), cut a hole from the top of each heart. Place on large lightly greased baking trays lined with non-stick baking paper and bake for 1215 minutes or until golden and firm. Allow to cool slightly before transferring to a wire rack to cool completely. Thread onto twine or ribbon to hang. Makes 80. Enjoy!! #oneuptraining

We did a hike at one of Springbrooks rainforests on the weekend, packed a picnic lunch, no mobile service, just the two of us and everything this beautiful place had to offer. There is something so peaceful about nature, we felt like we could have sat there for hours listing to the stream, watching lizards soak up the sun and dragonflies flying around.. It really hits a refresh button. Do something that that make you feel this way!! Sometimes we have to make time, otherwise we never get around to doing it. Life is so full and busy, but when you make time to have moments like this, you feel so content, happy and peaceful #oneuptraining

Felicity completed her first ever 10k race in just under an hour and also raised over $1000 for the JDRF (Type 1 Diabetes Foundation), its one of her proudest moments for the year as her younger brother has Type 1 Diabetes. Set some time aside to reflect on your year and be inspired for the possibilities for the year to come ! A half marathon (21k) might be in the pipeline for next year #oneuptraining
