22.01.2022 Our artichoke plants are producing an impressive number of chokes at the moment. After my last post with a favourite recipe for these weird things, I got another one to try from lovely Jacquie at @betsy_blonde. (She makes beautiful jewellery, check out her insta feed!) This is a delicious entree. Frans has declared this as the only way to cook these babies from now on! . Peel off other outer leaves of the chokes. Trim and remove the hairy bit in the centre. Pop into a bowl o...f lemon water till you’re ready to cook them. Boil the prepared chokes in salt water with a squeeze of lemon till they are just cooked. Then roll in finely grated Parmesan cheese. I dipped the chokes in a bit of egg white first to help the cheese stick to the flesh. Now fry lightly them or bake in the oven. I chose to bake them. Serve with a bit of good mayo or garlic aioli, and a squeeze of lime if you wish. TIP: Wear gloves when preparing the artichokes.
