21.01.2022 Yummy Yummy Crayfish We have 20kg of delicious cooked crays (aka Western spiny lobster) arriving tomorrow with 10kg already pre-sold! This will be our last order of crayfish and will only be future ordered for special events and pre-orders. Don't miss out on these amazingly delicious ones! The are good to keep for 3 months in the freezer if you are not planning to eat them immediately. To defrost just leave in the fridge overnight.

19.01.2022 Octopus is an amazingly delicious and is so easy to cook- Baby octopus grilled results in crunchy tasty tentacles where as our bigger friends offer nice meaty flesh: This simple Greek dish offers the lovely Mediterranean flavors - if prefer caramelised octopus marinating in honey and soy will offer a tantalising flavour. Place octopus in a pot and cover with enough water. Bring to a boil. Boil for 40 minutes. Remove octopus from hot water, rinse and place in a bowl. Drizzle... with olive oil and add chopped garlic. Let is cool and rest at room temperature, for 30 minutes to 1 hour. Preheat a gas grill or light the BBQ to medium-high heat. Slice octopus tentacles. Grill for 3-4 minutes per side, until charred. Remove from heat and place in a bowl. Drizzle with olive oil and add lemon juice. Season with salt and pepper. Sprinkle some oregano (optional) and parsley on top. You can also add some chopped garlic, too (optional). See more

13.01.2022 Living in the Goldfields doesn't mean missing out on the delicious and gourmet food of our city friends. If you are out to impress try this upmarket steamed crab that is embarrassingly indulgent. Served with Chilled champagne! We have 20kg of Crabs arriving on Thursday afternoon.. CRAB STEAMED IN CHAMPAGNE AND BUTTER For each crab:... 3 tablespoons unsalted butter, divided 2 cloves garlic, minced 1/2 cup champagne or sparkling wine 3 tablespoons minced flatleaf parsley, divided If your crab hasn’t been cracked and cleaned, remove the top hard shell and thoroughly rinse out and remove the gills and fat. Separate each leg where it attaches to the body. Slice the center of the body in half. Set aside. My friend Anna has a great little tutorial at her site, here. Warm a large pan or medium, wide pot with lid over a medium flame. If you are cooking more than one crab, use a large Dutch oven or similar pot. Add two tablespoons of butter. Once melted and bubbly, add the garlic, stirring frequently to prevent browning. When the garlic is fragrant, add the champagne. Saute for a couple minutes, then add two tablespoons of the parsley. Next, add the crab, body and legs, and cover. Steam for about 7-9 minutes. You want to get the internal temperature of the crab to 165 degrees. When the crab has been thoroughly reheated, remove from pot. Melt the last tablespoon of butter. Pour butter into small serving dish. Add remaining parsley. Serve.

These locally caught, cleaned and vacuum frozen fish will be the envy of all your friends. 04.01.2022 As requested we have sourced some whole squid - they arrive on the truck tomorrow! My father worked as a Seafood Chef at the Croat Islands Restaurant in Fremantle and perfected the art of cooking squid (aka calamari) Heres some squid eduction: "Chicken of the Sea" - Cooked over a searing/blazing hot bbq or grill squid only takes a few minutes to cook - any longer and you will be left feeling like you chewing an old tyre! The squid has a very high moisture content and needs... to be patted dry and basted with olive oil (with or without additional flavours such as garlic, lime/lemon, dill) Cooking the tubes whole is best - but you will need to tip them once or twice to remove the accumulating water in the tube. You can cut into the tube (as if you are making rings) which helps the tube lay flat when cooking as they tend to curl The heat needs to enough to sear the outside in 90-120 seconds - so the hotter the better. 3-4 minutes and they are done! 03.01.2022 Merry Christmas from Outback Seafood Market: Left-overs from your Christmas lunch? Storing seafood correctly will allow it be consumed while tasting great and prevent illness. Fresh Prawns (cooked or raw) can be refrigerated for 2-3 days Leave them in their shells, place them in a single layer on a plate or tray, cover tightly with plastic wrap and store in the coldest part of the fridge. Having airtight containers will prevent cross contamination of smells in your fridge.... This is also good advice for any seafood, but ideally it should be cooked as soon as possible after it has thawed. Frozen seafood should not be re-frozen once thawed - however if it is raw and you are cooking it, once it has cooled you can re-freeze it (but only once) - This is for all seafood.
