04.01.2022 Perfect Pork Roast With Crackling !!! Step 1: Preheat Oven to 220c. 2: Dry your roast with paper towel. 3: Use oil of your choice all over the roast. 4: Use a c...oarse / cooking salt and cover the crackle with it . ( if fine salt is used it will leave a salty taste). 5: Place in a baking tray, also can be on a wire rack in the tray or on sliced carrots ( sacrificial). Must use tray to catch juices. 6: cook at 220 c for 20 minutes in centre of oven. can be 25 minutes if needed. 7: at 20-25 minutes do not open door, just turn oven down to 170 c and finish for about 50 minutes per kg. Brush of excess salt when finished. If quality pork is used it will be very juicy when finished. Tips, set a timer for the 20 minute mark and again for the time you calculate to finish the meat. Then you only have to go to the oven one time during the cooking procees. Also do not cover when resting as any steam will soften the crackle. Dont forget the apple sauce. MERRY XMAS !!!
