Chickpeas + Mushroom + Brie Ingredients for 2 people. 1/2 onion 2 garlic cloves... 300gr assorted mushrooms Pinch of saffron 2 cans of cooked chickpeas Vegetable stock 50 gr brie cheese Piquillo peppers Pickled onion Parsley 1. Light the fire and cut the onion into small pieces. Add some salt and add it to the pot with oil. Stir a little and lower the heat to a minimum, so the onion is going to cook slowly 2 Cut the mushrooms into medium pieces 3. Add all the mushrooms and garlic to the pan, stir and raise the heat to maximum again. When the mushroom is golden and you have released all the liquid, in about a minute, add a pinch of saffron. Stir and add the chickpeas with all the broth they have. Stir and re-raise the heat to maximum. 4. When the broth begins to dry, add a few more teaspoons of vegetable broth. 5. When it is textured, turn off the heat and place some good pieces of brie cheese inside the pot. Stir until it turns into a cream and immediately take off the heat and plate it. to finish a touch of pepper, parsley and piquillo pepper strips
