25.01.2022 ONE-PAN SAUSAGE PAELLA QUICK & EASY! One-pan recipes are a life saver when youre busy. This delicious Paella recipe using Pandani Beef Sausages tastes amazing.... INGREDIENTS: 4 cups hot chicken stock. 1 tablespoon saffron. 2 tablespoons olive oil. 1 medium brown onion, finely chopped. 200g Pandani Beef Sausages, sliced. 350g chicken thigh fillets, no bone or skin, cut into 2cm chunks. 3 cloves garlic, crushed or grated. 1 teaspoon dried chilli flakes (optional). 2 teaspoons smoked paprika. 1 red capsicum, sliced. 2 medium tomatoes, roughly chopped. 300g paella rice. Salt and pepper, to season. 100g frozen peas. 2 lemons cut into quarters. 2 tablespoons parsley, chopped. Extra parsley for garnish (optional). METHOD STEP 1 - Add the saffron to the hot chicken stock, stir thoroughly and set aside. STEP 2 - Place the olive oil in a large, wide pan and add the onion, cover with a lid and cook over a gentle heat for 3 minutes, stirring occasionally. STEP 3 - Remove the lid and add the Pandani Beef Sausage and chicken, fry over a medium-high heat for 2 minutes. Turn down the heat and add the garlic, chilli and paprika. Cook for 2 more minutes. STEP 4 - Add the capsicum, tomatoes, paella rice and chicken stock, plus salt and pepper. Bring to the boil, then turn down and simmer for 15 minutes, with the lid off (stir slowly once only). STEP 5 - Add the frozen peas and cook for a further 5 minutes. By this time all the stock should have all been absorbed. FINAL STEP Gently add lemon quarters to top of paella and spinkle chopped parley onto top. Take off the heat and serve immediately.
