01.01.2022 Hudson Bay (Canada) Kohlrabi, apple, baby cos, red onion, radish, craisin and pecan nut with maple and cranberry dressing There's 4 levels of crunch in this one. Each one satisfies your palate in different way. Chewy and somewhat tart cranberries are there to contrast them all. Earthy sweetness of maple syrup, combined with sour cranberries dresses this entire ensemble for one kind of performance in your mouth. Let's get the party started !... Ingredients: Kohlrabi - 1/2, peeled and cut into matchsticks Apple - 1/2, peeled and cut into matchsticks Radishes - 3, peeled and cut into matchsticks Red onion (optional), sliced into 2 mm rings Baby cos lettuce - 1/2 bunch, leaves separated and sliced lengthwise Frozen cranberries - 1 cup Sugar - 1/2 cup Craisins (reduced sugar) - 2 tbsp. Pecans - 2 tbsp. Maple syrup - 3 tbsp. Apple cider vinegar - 2 tbsp. Olive oil - 1 cup Pinch of salt and black pepper Dressing: Cook 1/2 cup frozen cranberries with sugar until reduced by half. Strain through and let cool, leaving the berries aside. Blend with maple syrup, cider vinegar, some salt and oil. Add berries back into the mixture. There's enough dressing here for 8-10 portions. Keep refrigerated for a month. Mix all the salad ingredients with 2 table spoons of dressing right prior to serving.
