21.01.2022 Hacking traditional baking recipes and converting them into vegan became a passion of mine - confessed Callum Finglas, our Pastry Chef at Plant Based Dough Co. So as many of us have our own story of how we’ve become vegan; professional bakers and chefs would surely have a lot to tell about their personal journey into becoming experts in creating vegan food we love to eat. Here is a story of our Chef, Callum, who is a driving force behind our plant-based treats.... Being initially trained as a chocolatier and a traditional pastry chef from a young age; Callum took his first attempts in creating vegan desserts in 2016, when he was working with a couple of friends at a patisserie in Brisbane. Everyone was able to enjoy Callum’s desserts at the place. NO, not everyone, really. Everyone except those two dear friends Callum worked with It was simple they couldn’t eat Callum’s cakes and pastries because of their vegan diet. This encouraged Callum to create his first vegan dessert, which happened to be a chocolate and orange cheesecake. The friends were happy, Callum was amazed by the texture and flavor of it, and even some professional pastry chefs couldn’t guess it was made with tofu and had no traditional ingredients in it. Inspired by his personal win, Callum started visiting all the vegan shops around Brisbane and kept experimenting in his kitchen. I realized that I enjoyed creating food that is inclusive of everyone to eat and making more people happy. So, vegan food was the answer, says Callum. My role at Plant Based Dough requires research and experimentation to make classical treats and cakes vegan. Currently, I am trying to make a perfect plant-based macaroon and marshmallow that will not only taste amazingly but also be consistent in quality and texture, which is one of the key demands in the food production industry. Here is what our Chef Callums Chocolates has to say about it:... Cupcakes are one of the classic weekend home baking experiments with kids, something that everyone should be able to share regardless of dietary requirements. There are thousands of different recipes available these days online and in cookbooks; but how to choose the one or how do you make your own recipe. In cupcakes eggs work as a binding agent and also help provide some fat for mouth feel. To replace them we need to account for both of these properties. The most common egg replacement for cupcakes is commercial egg replacer and a mixture of equal parts of plant-based milk and vegetable oil. Experiment and see what works best for you. 13.01.2022 Thick vegan caramel Ever wondered how to make a nice and thick vegan caramel that isnt overpowered by dates? First lets look what makes a caramel vegan or not in its most simple form. Essentially it is sugar combined with liquid. All caramels require these two ingredients in different amounts. When you melt sugar by itself and let it cool down; you will end up with a solid piece of caramelised sugar. To make caramel edible we add a variety of liquids. The more liquid t...hat is added to the sugar the runnier the caramel will be. Other ingredients like butter are added to caramel to help with the mouth feel. So to make a thick vegan caramel start with a normal caramel recipe that doesnt have any dates included, then change out the non-vegan liquids for your preferred vegan milk. To make a successful caramel it is important to buy and use a good thermometer. When a recipe says a particular temperature like 150 degrees Celsius it is important to reach the temperature when boiling the caramel. Boiling caramel to certain temperatures controls the liquid content in the caramel and the final thickness of the caramel. Any caramel recipe that does not include boiling sugar by definition are not caramels. Find a traditional recipe and change the butter for your favorite vegan butter and use egg replacer to replace egg yolks (see our previous post on egg substitutes).... It is important to use wine. Do not be tempted to use water instead of wine. Wine helps soften the dough making it a crisp shell. For the filling the options are endless. They can be filled with your favorite soft vegan cheese or a sweet mousse. Hot tip To keep the shells crisp fill them only before eating. 12.01.2022 Egg replacers in baking As a pastry chef one of the key things we are constantly asking is how ingredients behave in recipes and when we bake with them. We look at every ingredient in a recipe and try to understand what it does to the final product. When we make a recipe vegan we need to understand what egg is doing in this recipe and what properties of the egg are being used. The most common uses of egg in recipes are:... Meringues. Egg white acts as an aerating agent. Custards and curds. Egg yolk/whole eggs to thicken. Enriched doughs and mousses. Egg yolk for fat content. Attractive finish for baked goods. Egg yolk/whole eggs as a glaze. Cakes and burger patties. Whole eggs as a binding agent. Mayonnaise and sauces. Egg yolks as an emulsifier. After working out what egg is doing in the recipe we look for a replacement that will do the same function and also not change the flavour of the final product. Most commercial egg replacers work well in recipes where egg is being used as a binding agent, as a glaze and in some cases for minimal aeration. The main product being used for aeration in making meringues is Auquafaba, which you can learn more about in our previous post. To thicken custards and sauces we use a variety of ingredients from corn flour to more exotic ingredients like agar agar. Which ingredient you use depends on what final texture you would like in the sauce. To replace the fat content, we often use vegetable oil, plant-based milk or vegan butter. For glazing we use a mixture of plant-based milk and sugar to give baked products an attractive finish. Lots of fruits like bananas can be used for binding if you dont mind the fruit flavour in the finished products. For more flavour neutral options lots of grains and seeds can be used like flax seeds. Emulsifying can be a bit more complicated compared to the other uses of egg. For every different product a different emulsifier is used. There is a massive variety of commercial emulsifiers available. The egg replacement drama in making mayonnaise is solved easily by using soy milk blended with oil. Soy milk when aerated acts as its own emulsifier with oil to make a creamy thick mayonnaise. Happy baking everyone!

The final consistency and hardness of buttercream comes a lot from butter. Many vegan butters are too soft for a good buttercream. Generally, if butter is soft and spreadable straight out of the fridge it is too soft for buttercream. Most buttercreams are made using the ratio of 2 parts of icing sugar to 1 part of butter with essence added for flavour. 05.01.2022 Well behaved aquafaba Aquafaba is a fairly new thing that has been talked about for about 2 to 3 years now. Essentially, it is a liquid that comes after cooking pulses. At the moment the most commonly used aquafaba is the liquid that comes from canned chickpeas. So far professional chefs do not choose to use it very often because it behaves inconsistently. The result is baked goods with too much quality variation, which is something that professional baking business cannot... afford. Most people have the same trouble when baking with aquafaba at home. If you are using aquafaba from canned chickpeas at home, say, for your vegan meringue recipe; use a stand mixer or hand beaters. Keep beating it for about 20 minutes and slowly add some sugar in. The trick is a lot of beating and then adding sugar really slowly to it, otherwise your meringue will collapse. In general, one of the good tricks for using aquafaba is to reduce it down on the stove until it forms a really thick jelly-like liquid. This will get it down so that it is pretty much just the protein in the liquid and make it act like egg-white. Another great news is that we should be able to see a commercial powdered version of aquafaba very soon on the market. Once it comes out it will change the way we can do everything and it will give us the consistency that we are looking for. The world where word border is getting new significance and meaning whether it is closure of country border or your personal ones with social distancing and self-isolation at play. We are saddened to see businesses shutting down, jobs being lost or being put on hold. We are lucky to be still operating in the time like this; and like everyone else who are still running we are practicing... every measure of good hygiene at our work place. We are looking well after our kitchen staff. Also, some members of our team are working from home.
