25.01.2022 Keep everyone in the family happy this week with spaghetti and meatballs for dinner! Looking for a low carb or gluten free option? Swap the spaghetti for zucchini noodles and youre all set Recipe: INGREDIENTS 360g Peppercorn Extra Lean Beef Meatballs... 1 large onion, finely diced 3 garlic cloves, grated or crushed 1 large carrot, grated 2 teaspoons dried mixed Italian herbs 2 tablespoons fresh basil, shredded 400g tinned diced tomatoes 400g passata 1 tablespoon olive oil 400g spaghetti 1/2 cup Parmesan, finely grated Salt & pepper to season PREPARATION 1. Heat oil in a frypan over medium heat and cook meatballs, turning, for 3-4 minutes until browned all over. Set meatballs aside and make the tomato sauce. 2. Add grated carrot and onion to the frypan and cook for 2 minutes on a medium heat until softened. 3. Add in garlic and Italian herbs and cook for 1 minute, or until fragrant. 4. Add in tomatoes, passata and meatballs. Cover and simmer gently for 15 minutes. 5. Whilst meatballs and sauce are cooking prepare the spaghetti as per pack instructions. 6. After 15 minutes take the meatballs and sauce off the heat and stir in the fresh basil. 7. Add the cooked spaghetti to the meatballs and sauce and toss to coat all the spaghetti. 8. Serve with a sprinkle of Parmesan cheese. See more

Add a crusty baguette and a lovely red for a perfect winters night at home. Buon appetite! Recipe below. Regram @nolan_and_us INGREDIENTS (Recipe serves 4) 450g Peppercorn Extra Lean Gluten Free Beef Sausages... 2 cups French (Pu) Lentils 1 tbsp olive oil 1 onion, finely diced 2 garlic cloves, finely chopped or crushed 1 large carrot, diced 1 celery stick, diced 2 bay leaves 2 tsp fresh or dried thyme 2 tsp salt PREPARATION 1. Place a large saucepan over medium heat and add olive oil. Add chopped onion, garlic, carrot and celery. Saut until softened, 5 to 10 minutes. 2. Add lentils, thyme, bay leaves and salt. Stir through and follow with 5 cups of water. Bring to a boil then reduce to a simmer. 3. Simmer lentils for 20 to 25 mins until tender. While your lentils are gently simmering, bake, pan fry or grill your sausages. 4 When lentils are tender, drain any excess water and season to taste. 5. Serve and top with sausages.

Heat half the oil in a large, heavy-based saucepan over medium-high heat. Cook sausages, in batches, turning, for 5 to 6 minutes or until browned all over. Transfer to a plate. 2. Heat remaining oil in pan. Add onion and garlic. Cook, stirring, for 5 to 6 minutes or until onion has softened. Add beans, tomatoes, tomato sauce, Worcestershire sauce and honey. Return sausages to pan. Cover. Bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 25 minutes or until sausages are cooked through and sauce thickened. Sprinkle with parsley.
