13.01.2022 WF RED WINE BRAISE This is a classic French red wine braising sauce. Beef... It will allow you to cook the much loved Beef Bourguignon, simply choose Blade cut of beef, cut into 3 - 4 cm pieces, braise long and slow in the sauce and add the classic baby onions and mushroom.. serve with boiled potato.... Lamb... can be treated in the same way, my choice would be shanks, simply put into a baking dish, pour the sauce over, cover with foil and cook 5 - 6 hours ina slow oven. Chicken... this will produce a fine Coq au Vin, simply dust the chicken (I prefer Thighs) and place them in your best cast iron cooking pot, add some diced bacon and cook in a slow oven for 2 hours. WF KOREAN SLOW COOK BRAISE This is the sauce that saves you from disasters in the rib area. You can equally choose short pork ribs or beef ribs. On the bone or off, your choice, I prefer bone in, adds to the flavour. Brown the ribs in a wok on all sides, place into a cast iron casserole, cook on the stove top on a very low gas or electric for up to 6 hours, but check as they go. Cover with a catouche (piece of baking paper cut roughly to the size of the pot and pushed down onto the meat) to avoid too much sauce reduction. This is classically served with a Korean style coleslaw.

11.01.2022 Butter Chicken (called in Hindi, MURGH MAKHANI) Developed in the 1950's by three owners of a restaurant called Moti Mahal. It was the simple matter of mixing the left over cooked chicken (probably cooked in a Tandoor Oven) wih a 'gravy' of rich tomato and butter. A new and now much loved dish was born. Wikepedia says..... Chicken is marinated for several hours in a mixture of lemon juice, dahi (yogurt) Kashmiri red chilli, salt, garam masala and ginger garlic paste. The chicken is usually cooked in a tandoor (traditional clay oven), but may be grilled, roasted, or pan-fried. It is served in a mild curry sauce that includes butter. The sauce is a tomato- and onion-based sauce that is simmered until smooth and much of the water has evaporated. There are many variations on the composition and spicing of the sauce, which is sieved so that it is finally velvety smooth. Spices may include cardamom, cumin, cloves, cinnamon, coriander, pepper, garammasala and fenugreek (Punjabi/Hindi: kasuri methi). Cream may be used in the sauce or as a garnish. Cashew paste may be used as a thickener and is finally garnished with cilantro. In this world of changing tastes and evolving eating habits, this sauce presents a wealth of chances to explore other meat options, vegetable options and even lentils and beans. The basis remains the same, the protein should be at least seventy five percent cooked or in the case of lentils or beans, fully cooked. I am not fond of the sauce with beef or lamb, it seems not a good marriage. I like to eat this with a good flat bread, others prefer rice, but it can also be eaten with noodles, couscous, barley, burghul or quinoa. Mashed potato is not beyond the possible. Yoghurt is delicious as an accompinament.
