21.01.2022 My Beef Bourguignon served on a bed of saffron infused rice pilaf From the shoulder, there is plenty of gelatine in this meat to impart a heavy dose of natural flavour throughout the meat and into the sauce! The red wine reduced sauce is terrific against the back drop of very tasty chunky diced meat. Again, we make the most of this naturally moist and flavourful diced cut by slow cooking it with root vegetables (including glazed eschallots) to very tender. Served with long grain rice that has been cooked slowly in chicken stock infusing the saffron threads.
