22.01.2022 Team Recipe Bretts Southern Fried Chicken Prep Time 1 hour | Cook Time 45 minutes | Total Time 1 hour 45 minutes | serves 4 ... INGREDIENTS: Cups: -2 x all-purpose flour -1 of buttermilk Tablespoon Measures: -2/3 of Salt - of dried thyme leaves & dried basil leaves -1/3 of dried oregano leaves -1 of ground ginger, celery salt, ground black pepper & dried mustard -3 of paprika, ground white pepper -2 of garlic salt -1 large egg -1 whole chicken, cut into ten pieces - Vegetable oil for frying METHOD: Add the spices to a small food processor until theyre all uniform in size Add the flour in a bowl with all the herbs and spices and mix with a whisk. In a second large bowl, add the buttermilk and egg together and whisk until combined. Add the chicken to the buttermilk mixture for 20-30 minutes. Remove chicken from the buttermilk soak and let any excess buttermilk drip off. Cover the chicken pieces in the flour mixture on all sides, then shake off the excess coating. Let it rest on a cookie sheet for 20-30 minutes. Add oil to a deep fryer or a large pot so that the chicken can be fully submerged. Heat the oil to 350 degrees and fry in small batches for 15-18 minutes. 18.01.2022 Glassware is one of the most important items used in the hospitality industry. Whilst being a durable material, under certain conditions it can be fragile. The... number one cause of breakages is through improper handling which ultimately affects a venues bottom line. Below are tips to reduce breakages with suggested handling guidelines: - Always wash new glasses before using. -We suggest the use of glass baskets or racks for storage and longevity of your glasses. -Allow glasses cool down before handling. When polishing, avoid twisting the base and bowl in opposite directions. - An insufficient stock of glasses means that they are not given enough time to reach room temperature before or after they are washed. This can be a cause of thermal shock where a sudden temperature change causes weakening and stresses to the glass inner strength. -Mechanical shock is caused when glasses come in to contact with another object such as a beer tap, spoon, crockery or another glass. It is these mechanical impacts which cause minute abrasions (invisible to the eye), creating a weakness in the glass which will lead to it being more susceptible to breaking. -Always remove from service any glasses showing damage (chipping) or excessive wear and tear. -Always use an ice scoop, never scoop ice with the glass. -Never put cutlery or other objects into glasses -Never stack glasses which are not designed for this function. -Never collect glasses in clusters as this can cause glass to glass impact.
