21.01.2022 Five years ago today we opened the door of the Pink Moon Saloon to the public for the first time. We decided to build a bar in a bin alley, and through a project defining collaboration with the world’s most articulate Arsenal fan, the sublimely creative and talented @mati_yoooo, a thing of beauty emerged. We will have a little cheers tomorrow with the 15 lucky people that we are currently allowed to serve under restriction, and an absolute blowout party when this is all over. A huge thank you to anyone that has ever taken the time to walk through our doors. Here’s to five more years, and many more after that

18.01.2022 Strange days indeed, but were still out here shaking, stirring, pouring, and even joking. Theres certainly been plenty written about the mood of today, and we still every day face the ambiguity of tomorrow. To every cloud a silver lining - perhaps many - but for us the most tangible thing to emerge through all of this is the genuine appreciation of what hospitality is and what it means to be part of a community of like-minded souls. The kind of curious hedonist that believe...s a perfectly poured beer can be poetry, that a whiskey can tell a thousand stories, that a cocktail can pick you up and drop you somewhere in your past, or far away in your future. In an age where it would be all too easy for cynicism to creep in from both sides of the bar, where unrelenting expectation and minute profit margins, combined with the COVID shadow, too often squeeze out the very JOY of what we are all here to pursue - where we could, under the weight of this all, allow to develop a disconnect between human beings playing their defined roles of server and served, it is vastly uplifting that the effect of this pressure, this nebulous stress, has actually galvanised the community towards simplicity and greater humanity, and appreciation of the things we create and enjoy together, with and for each other. We now have bookings, limited sitting times to turn tables, expectations regarding spacing and how people sit/stand/enjoy/interact, we spray, we wipe, we clean. We have to turn people away due to capacity restrictions, and they smile and say no worries well try again later, we tell people they cant sit with their friends for the same reason and they joke that they dont like them anyway. We have a more limited offering under restrictions and the response is not indignation but simply that people are happy just to be there. And for this kind response, the fact that this has been met not with begrudging compliance but actually with a kind of joyful respect, is heartwarming and a credit to all involved. Long live that connection and long live our community.

16.01.2022 Hot Day/Cold Cucumber - Cucumber juice coarsely clarified and acidulated, charred pine syrup, Tanqueray, Dolin Blanc because it rules, Fino. Not trying to reinvent the wheel today, just trying to make a modern but familiar feeling wheel thats a really smooth ride, and most importantly, has air conditioning. 08.01.2022 *On the philosophy of batching and bar preparation* It goes without saying that bartenders should learn classic cocktail structures and how to make things to order to begin with - in the same way that a chef studies the building blocks of cuisine - so too a bartender learns the building blocks of classic drinks. However, the idea that not making every cocktail from scratch entails a loss, ignorance, or lack of artistry is in our opinion a complete misnomer - and ignores almos...t every positive advance in bartending technique and gastronomical integration of the last 20 or so years. We for one - and there are many before us to which we owe this - celebrate it. No different from a chef, a modern bartender syrups, sherbets, reduces, infuses, adjusts, dehydrates, clarifies, preserves, bottles, ferments, blends, and performs a multitude of other processes as a matter of course. The integration of gastronomical technique and preperation to a lesser or greater extent - the advancement in bartending in the last 20 years - has perhaps become so ubiquitous as to be invisible. It is simply expected - and rightly so. It is undeniably the case that with care in preparation more things are possible - not just in terms of speed and convenience (which are only the most obvious benefits), but in thoughtfulness and depth of what can be offered to the customer. A multitude of other benefits are easily brought to mind - shelf stability and thus reduction of waste, the achievement of elusive consistency in complex service situations. The idea that a venue can prepare hundreds of serves of a specific drink in one night at a level of consistency so as to make them indistinguishable from the first to the last is a cause for celebration of system and planning - not scepticism. Past the very necessary process of learning basic structures, doing something in five or six movements that could be done in one is an apprenticeship that stops short of the final goal. You batch because you respect the guest and you respect the ingredients - not in spite of or in opposition to this respect. It might not be for everyone, but its for us and its for you.
