As you can see here by squeezing the fresh new buds of the flowers is what gives it its vibrant colour. Don’t bother with dried flowers or leaves as it just won’t work.... . I more often work with dried herbs in infusions as I like it nice and slow. But not in this case! Fresh flowers and I also like to cook them in the oil on a very low heat.
