While most people just add it to smoothies or energy bowls, I try to use it in different and creative ways. . . Tapioca crepe is an option that I always like to have for breakfast, but the nutritional value in this dish usually comes from the variety of fillings that can be used, as the tapioca crepe is made only from tapioca starch and water. . . My tip here is to use superfood powders when hydrating the tapioca. Normally we use 500g of tapioca starch and 300ml of water. So instead of using only water, I blended a cup of fresh spinach, 2 tablespoons of spirulina and 280ml of water. 23.01.2022 Every time I visit an asian grocery store I get a different ingredient that I've never tried before. This week I got a packet of lotus root. Lotus root is actually the stem found underneath the blooms of the lotus flower, it's a starchy vegetable similar to potatoes. These roots are peeled, thinly sliced, and can be fried, stewed, or stir-fried. I decided to make it in the air-fryer. 180C for about 10 minutes, seasoned with just salt. Success!! It remains crisp yet... tender. Great option for a healthy snack (if not deep fried in oil!), full of minerals and vitamins. Should I add a meal to the menu with this ingredient? See more

21.01.2022 A short story of my journey as a vegan chef... If someone had told me 10 years ago that I would become a chef, I never would have believed it. I was happily working as a personal trainer and loved my career. But then I decided to move to Australia and everything changed. I got my first job in a commercial kitchen in 2013, washing dishes. In 2015 I got my chef qualifications and soon after, I was running a kitchen of a popular Gold Coast restaurant. ... In 2016 I stopped eating meat, and my journey to a vegan lifestyle began. I gained experience experimenting with different ingredients and reading a lot. Everything I learned and shared here is self-taught. Phytate (phytic acid) is an enzyme inhibitor, referred to as "anti-nutritional" factor, reducing our ability to absorb nutrients. Phytase is an essential enzyme necessary for the digestive process, helping to reduce the negative effects of phytic acid in the body. Soaking raw nuts, grains, legumes and seeds activates phytase, which breaks down phytate, decreasing flatulence and making digestion lig...hter. Also, phytate is water-soluble, so some leaches into the soaking water that gets discarded.
