23.01.2022 Are you missing our wood-fired pizza? So are we! Never fear our Exec Chef has shared his top recipe for pizza bases, youll just need to add your fav toppings INGREDIENTS: - 500g bakers white bread flour - 0.5 teaspoon fine sea salt... - 1.5 teaspoon dried yeast - 1 tablespoon maple syrup METHOD: 1. For the dough, place flour & salt onto a clean surface and make a well in the centre. 2. Add the yeast & maple syrup to 325ml lukewarm water, mix together and leave for a few minutes, then pour into the well. 3. Using a fork and a circular movement, slowly bring in the flour from the inner edge of the well and mix into the water. Continue to mix, bringing in all the flour when the dough comes together and becomes too hard to mix with your fork, flour your hands and begin to pat it into a ball. 4. Knead the dough by rolling it backwards and forwards, using your hands to stretch, pull and push the dough. Keep kneading for 10 minutes, or until you have a smooth, springy, soft dough. 5. Place the dough in a lightly greased bowl, cover with clingfilm and leave in a warm place to to prove for 45 minutes, or until doubled in size. 6. Divide the dough into 4 equal balls. Dust a clean surface and the dough with a little flour and roll it out into a rough circle, about cm thick. 7. Add your toppings & bake for 10mins in a preheated oven at 250C. Tag us in your creations!

Youll need: 3 slices of your favourite bread; 100g chicken breast; 2 rashers of bacon; roma tomato; lettuce; & mayo. ... Whip it up: Grill your chicken breast & bacon. Toast the bread. Then stack it up - start with a slice of toasted bread, add a healthy dollop of mayo, follow with chicken breast, bacon, lettuce & tomato. Then add the second slice of bread & repeat (mayo, chicken, bacon, lettuce & tomato). Finish with the last slice of bread. Serve with fries if you please

19.01.2022 Fast facts about the man behind the menu... Ashley Hughes our Exec chef. Ash started he career as a chef at the ripe old age of 14. He worked as a dishwasher in his home town of Cooroy & shortly after started his apprenticeship. This guys loves everything JAPAN. He is completely obsessed with their food (his fav food is ramen). He has lived & worked there. And he even appeared on a Japanese TV cooking competition (coming in second place).... Ash enjoys starting the day with a long black & finishin g it with his favourite cocktail, a Negroni.

01.01.2022 Sweet treats for this weekend Check out our Strawberry Panacotta recipe from our Executive Chef, Ash. Its easy to make & oh so tasty ---- INGREDIENTS ---- Full cream milk 200ml Thickened cream 300ml... Gelatine sheets 3ea Caster sugar 140g Vanilla paste 5g Frozen strawberries 500g Star Anise 2ea ---- METHOD ---- Measure out all your ingredients. To begin place the frozen strawberries and 100g of the sugar as well as the star anise in a small pot and simmer on medium heat. Stir until the mix reduces to a thick jam like consistency and then take off the heat, removing the star anise. Set aside. Add the gelatine sheets to a small bowl & soak in cold water for 5mins. In a small pot at the milk, cream, vanilla & remaining sugar bringing to the boil and then removing from the heat. Add the gelatine sheets and stir until dissolved. Mix the cream & strawberry mixture together. Using a stick blender or food processor blend until smooth. Strain through a fine food strainer. Transfer mixture to containers/jars/ramekins of choice & place in the fridge for at least 4 hours. Serve with fresh strawberries! Dont forget to tag us if you whip this up
