24.01.2022 On Saturday the State Government will launch a new SafeWA electronic contact registration system requiring certain businesses to maintain a contact register of all visitors. The new system will assist the Western Australian Health Department to deploy rapid and effective COVID-19 contact tracing if required. Although retail shops are not required to implement the SafeWA visitor registration system they are encouraged to do so and we have made a decision to voluntarily intro...duce the SafeWA registration system across both our Providore venues. From Saturday visitors will be asked to scan one of the numerous SafeWA QR code posters that will be displayed around our retail showrooms. Those without mobile phones may fill out their contact details on a manual register. Contact register information collected through the SafeWA app is not stored by us. It is encrypted at the point of capture and stored securely by WA Health for 28 days and only accessed if needed by the department’s contact tracing teams. Manual registration forms will be stored securely in our safe and destroyed after 28 days. We will not record or keep your information or share it with a third party other than the WA Health Department if formally required to do so. 22.01.2022 Its recipe time !! This Pumpkin soup is a timeless classic with a twist. Just add a little spice and coconut milk to take a simple pumpkin soup to the next level. This soup is vegan , dairy and gluten free so ticks all the boxes for entertaining. ... Recipe below .. Spiced Pumpkin & Coconut Soup Serves 4 1.2 kg pumpkin, peeled and chopped 1 TBS Providore Korma ,Malay or Butter Chicken spice blend 1 onion, sliced 2 garlic cloves , peeled whole3 cups stock of choice (veg or chicken) 1 cup waterSalt and pepper3/4 cup coconut milk 2tbs fresh coriander ( optional ) 2tbs Providore Dukkah( optional ) Place the pumpkin, onion, garlic, stock and water in a pot - liquid wont quite cover all the pumpkin. Bring to a boil, uncovered, then reduce heat and let simmer rapidly until pumpkin is tender (check with butter knife) - about 10 minutes. Remove from heat and use a stick blender to blend until smooth Season to taste with salt and pepper, stir through spice blend of choice and coconut milk. Western Australian Prawns baked with feta, tomato & herbs 1 jar Providore Pasta sauce with fresh garden herbs... 2 fresh long red chillies, finely chopped ( optional ) 1 tsp sweet paprika 2 tbs Margaret River blend EV olive oil 1 tablespoon lemon juice 200g feta cheese, diced 18 x Western Australian prawns, deveined and shelled Preheat oven to 200C/180C fan-forced. You will need 6 x 1 cup sized ramekins. Pour the Providore pasta sauce in a medium sized mixing bowl. Add the lemon juice , chopped chilli , olive oil and paprika and stir to combine. Divide the sauce between the 6 ramekins. Using tongs , push the 3 prawns into the tomato sauce. Divide the feta and do the same - evenly spacing it out. Sprinkle with salt and pepper and bake for 20 minutes or until prawns are baked and feta softens but still holds its shape. Serve with toasted wood fired bread and our Coward and black 2017 Semillon Sauvignon Blanc Serves 6 as an entree. @ Providore

Our vineyard team are busy picking Chardonnay grapes for our Blanc de Blanc sparkling wine. 2 tonne of sun ripened grapes are currently being hand picked on our property this week for our 2020 fizz. ... The reports from our vineyard manager Kim is that this years Chardonnay grapes have a clean and highly flavoured juice. A great outcome for this seasons fruit!

One is our Plum , Lavender & Black Pepper jam . We hand stone the plums and simmer them with Australian sugar , lavender from the garden and add a hint of freshly ground black pepper at the end. 16.01.2022 Mushroom pizza with our onion & thyme marmalade. its super easy to make ( you could wow mum on Mothers Day !!) , all you need is 250g of sliced mushrooms , 200g of your favourite local cheese ( feta , goat , ricotta , cheddar or plant based cheese) , a large pre made pizza base and a jar of Providores onion and thyme marmalade. Preheat the oven to 220C. In a large frypan , saut your mushrooms in a little olive oil until softened. Set aside. ... Crumble or grate your cheese of choice over the pizza base. Add a few dollops of onion thyme marmalade, then scatter with your sauted mushrooms. Sprinkle over salt and pepper and pop in the oven for 8-10 minutes or until the cheese has melted and the base is crispy. Serve with a rocket salad dressed with one of our delicious balsamic vinegars and a glass of red!

Well be hand roasting every day in small batches on a traditional copper roaster using the finest quality ultra-premium beans. And well be making amazing coffee using organic milk from our neighbours cows and the purest spring water drawn from an ancient ironstone aquifer deep beneath our property.

Use it to sprinkle over roasted vegetables , add to hummus, cous cous , tagines or scatter over toasted Turkish bread. ... Recipe below for Moroccan style Cauliflower soup 1 Tbs Providore roasted garlic olive oil 1 large diced onion 2 tbs Providore Moroccan spice blend 1kg Cauliflower, Raw 1 litre stock of choice 40g toasted Almonds 100g natural yoghurt of choice 1 Tbs Harissa or Sriracha chilli sauce ( optional ) Heat a large nonstick saucepan, add the garlic oil and fry the diced onion for 6-8 minutes, until soft. Add the Moroccan spices and cook until fragrant. Stir in the stock and cauliflower florets and simmer for 20 minutes, or until the cauliflower is tender. Season to taste with salt and pepper and remove from the heat. Using a stick blender, blitz the cauliflower mixture until smooth. From today we will be moving to guided tastings supervised by a staff member. Rather than offering self-tasting of all our products throughout the showroom we will now present a range of products at a tasting counter where a staff member will be on hand to supervise the tastings and to talk to customers about each product in a similar way to a... wine tasting. We have also temporarily switched to single use recyclable plastic spoons. 03.01.2022 A gorgeous day and perfect conditions for hand picking Chardonnay today .. It was all hands on deck to get the grapes picked by 12 so that they could be crushed and transferred to new French oak barriques. Ray Jordan has said of our current vintage Chardonnay that it’s Mealy nectarine and lightly cashew on the nose. The palate is rich and deliciously textured with riper fruit showing off the characters of this vintage. Oak has been well managed , adding a light toasty influence, and the creamy less richness adds weight to the middle palate. Score 91/100. Come visit Margaret River or Swan Valley over the long weekend and taste this delicious Chardonnay!

03.01.2022 Have you tried our mulled wine mix?! Its so simple , just tip a jar of spice mix into a saucepan , add 2 cups of water and simmer for a few minutes. Add brown sugar to taste , then pour in your @cowardandblack red wine of choice. ... Bring back to a simmer and then strain and serve in glasses. Its perfect for entertaining! 02.01.2022 It’s recipe time! Zucchini & Parmesan Fritters with Providore Tomato Capsicum Chutney. Perfect for that New Year’s Eve take - a - plate party or pop in a container to take to the beach. ... Recipe below ; 3 (about 400g) medium zucchini 75g (1/2 cup) self-raising flour 40g (1/2 cup) parmesan, finely grated, plus extra to serve 3 shallots, ends trimmed, thinly sliced 1 egg, whisked 1/4 cup fresh continental parsley, chopped 2 teaspoons dried oregano leaves 1/4 teaspoon ground nutmeg 1 teaspoon salt 1 tablespoon olive oil Trim the ends from zucchini. Coarsely grate the zucchini. Place in a colander and squeeze out as much excess moisture as possible. Transfer to a bowl. Stir in self-raising flour, parmesan, shallots, egg, parsley, oregano, salt and nutmeg. Heat 1 teaspoon olive oil in a non-stick frying pan over medium-high heat. Drop three portions of zucchini mixture into pan. Cook for 1 1/2 minutes each side or until golden and cooked through. Transfer to a plate. Repeat with remaining olive oil and remaining zucchini mixture. Serve with Providore Tomato Capsicum Chutney & Lady Margo Rosé.
