You can even order a sponge slab if you’re in need of a celebration cake (I could have baked my own, but it’s my hubby’s birthday and his fav is sponge - which really isn’t my forte). 20.01.2022 Got 30mins? Why not whip up a batch of scones. Ingredients: 500g SR flour 250g cream... 250g soda water Method: Add the flour to a large bowl Weigh out the cream and soda water and add to the flour. Using a butter knife, cut through the mixture until the liquid has just been taken up by the flour. The mixture will still look very uncombined - that’s good! DO NOT OVERMIX! Flour your kitchen bench liberally and turn out mixture. Gently pat mixture together and flatten with palms Use a floured cutter to cut out scones Brush tops with milk and cook in a hot oven until golden brown.

15.01.2022 Super simple Bacon, Potato & Corn Chowder to warm you up on a chilly winter’s day. Ingredients 1 large potato 3 rashers of bacon... 1 large cob of corn 2 cups of cut pumpkin 1 tablespoon of butter 1 tablespoon of plain flour 3/4 cup of milk 1 heaped teaspoon on powdered mustard Salt and Pepper Method Dice potato into bite-sized pieces and set to boil in a saucepan with the Cut pieces of pumpkin and powdered mustard. Dice bacon and sauté with the butter in a separate saucepan. Add flour to the butter and bacon and stir for a minute or two to cook the flour. Add milk and whisk to combine with the flour/bacon. Cut the corn from the cob and add to the bacon roux. Using a slotted spoon, transfer the cooked potato and pumpkin into the bacon and corn, then bring the pumpkin/potato water back up to the boil. Continue to boil the pumpkin/potato water until it is reduced by half. Add this reduced liquid slowly to the chowder, stirring thoroughly. Add salt and pepper to taste.
