24.01.2022 Thank you to Clive Holden for recommending our club to cater at The Spirit of Leonard Cohen tribute concert on Saturday at Coolum Civic Centre. Although it was short notice members rallied and baked beautiful biscuits to serve with tea and coffee. We even got to sit in on some of the tribute and Jonathan played the part well - it was very enjoyable. Thank you to Johnathon Anstock for giving us the opportunity to cater for the tribute.

22.01.2022 We are so excited to announce that today, members of Quota Coolum Beach opened the @loveyoursister fcb money tin. The decision was made to place a money tin at our get to togethers, after a few members visited IGA Bli Bli last July and listened to Samuel Johnson speak about raising funds for research into personalised treatment for all patients everywhere and the establishment of a coordinated national approach to the collection, usage and storage of metastatic tissues for all cancer. But then COVID hit and our small club couldn’t get together let alone produce our tin but our members still dig deep and contributed and we were thrilled to count $712. We know that even this small amount will help Sam and his promise to his sister Connie, help kick cancer in the arse

21.01.2022 Recipe this week courtesy from Donna. Nanna’s Shortbread Preheat oven to 180% Ingredients... 125 grams sugar 250 grams pure butter 375 grams plain flour Cream butter and sugar until pale Add flour and beat until combined together Place on lightly floured bench and divide batch into three . Take one batch and roll into a long sausage. Flatten with hand and cut into biscuit size. Repeat with other two. You should have approx 30 pieces. Grandmas Kisses is a recipe handed down through a few generations Preheat oven to 170 degrees 250g butter cup icing sugar... cup castor sugar 2 eggs 1 cups SR flour 3/4 cup corn flour 1 1/2 cup plain flour 1 teas vanilla Beat butter and sugar together. Add eggs one at a time. Add vanilla & sifted flours until a thick dough forms You can add more flour if not thick enough. Put a teaspoon of dough onto a tray lined with baking paper and flatten with fork. Bake in oven until cooked approx 15 mins. Join together with vanilla/lemon icing. Apricot slice Preheat oven to 180 degrees 1 cup coconut... 1 cup dried apricots 2 cups SR flour 1 cup sugar 185 grams melted butter Chop dried apricots finely and cover with boiling water. Let stand for hour until softened and then drain. Combine all dry ingredients, add apricots and melted butter. Press into a baking tray approx 20cm square tray or 28cm x 18 cm tray and bake for 30 minutes at 180 degrees until firm Ice with lemon icing and cut into squares when cool. 15.01.2022 Recipe this week courtesy of Hannah. PIZZA LUNCH LOAF Preheat oven 180C/160C F/F. Grease 7cm deep, 9.5cm x 19.5cm loaf pan. Line with baking paper Place 1 cups self raising flour in large bowl. Add 1 cup grated mozzarella cheese ... - 3 green onions (thinly sliced) - 12 slices of salami (cut into 1cm pieces) -1/2 cup pitted mixed marinated olives (halved) cup semi-dried tomato strips (chopped) - cup finely chopped flat-leaf parsley cup basil (chopped) and seasoning. Mix until well combined. Make a well in centre. Pour in 4 eggs (lightly whisked), cup light flavoured extra virgin olive oil and cup milk. Stir until just combined. Pour into prepared tin and bake for 1 hour or until skewer comes out clean. Cool in tin for 10 minutes then completely cool on wire rack. To store, wrap in foil and place in air tight container will keep for up to 5 days if it lasts that long! Let us know how you like them and don't forget to share a photo of this slice with us. 11.01.2022 Recipe this week courtesy of Judith. APPLE SOUR CREAM SLICE PREPARATION TIME 10 minutes, plus 30 minutes Preheat oven to 180deg (160deg fan forced)... INGREDIENTS 1 packet butter cake mix 120g melted butter 1 cup coconut 1 x 410g tin pie apples ( can substitute with apricots or peaches) 1 egg 1 x 300ml carton sour cream Cinnamon sugar and or nutmeg Combine cake mix melted butter and coconut, press lightly into lined and greased slice tin (21cm x 30cm) Bake in oven for 10 minutes. Remove and spread base with undrained pie apples Combine egg and sour cream and spread over apple filling, sprinkle cinnamon sugar or nutmeg (or both) put back in the oven and bake for a further 20 minutes. Allow to cool and chill in the fridge before cutting, store in airtight container in fridge Let us know how you like them and don't forget to share a photo of your slice with us. PUMPKIN AND PINEAPPLE CAKE INGREDIENTS... 125g butter, softened 3/4 cup sugar 2 eggs 1 1/2 cups SR flour (sifted) 1/2 cup mashed pumpkin (cold) 1/2 cup crushed pineapple (drained) 1/4 cup milk 1/2 teas bi carb soda ICING 1 passion fruit 1 1/2 cups icing sugar 60g butter, softened METHOD Set oven to 170c. Lightly grease a 20cm round cake tin and line with baking paper. Beat butter and sugar to fluffy cream colour. Add eggs one at a time beating well. Add pumpkin and pineapple to batter and fold in gently. Stir soda into milk. Then add flour alternately with milk and soda mixing gently. Bake for 35 to 40 minutes depending on your oven. Let cake stand for 5 minutes then turn onto cake cooler until cold. Meantime mix icing ingredients together until smooth and creamy, then ice with passionfruit icing. Enjoy!!!! 08.01.2022 Our recipe of the week - Please like and share...... Sticky Date Mini Cakes with Butterscotch Sauce Cindy Makes 12 muffins Pre heat oven to 180 degrees. Grease 12 muffin pans, line bases with non-stick baking paper... Combine 1 cups of pitted dates with 1 cup of boiling water and 1 teaspoon bi-carb soda Set aside for 10 minutes, then coarsely mash with a fork. Beat with an electric beater, 80 grams of butter and cup of caster sugar until creamy. Add 2 eggs, one at a time and fold in date mixture. Fold in cup SR flour and cup pl flour. Spoon 1/3 cup of mixture into muffin pans (should make the 12) Bake for 20 25 minutes or until surface springs back when lightly tapped. BUTTERSCOTCH SAUCE Place pouring cream, 1 cup of tightly packed brown sugar and 60g butter into a saucepan and stir over medium heat for 5 minutes or until smooth. Topping: Beat 5 eggs with 2 cups caster sugar Add 2tsps finely grated lemon rind 1/3 cup lemon juice cup passionfruit pulp cup SR flour Pour over base, cook for 50 55 mins Cool in pan, spread over sifted icing mix.
