04.01.2022 Healesville Country Clubs Pastry Chef de Cuisine Kauri Kondaschek shares her go to Apple and Rhubarb Crumble to warm you up this winter. Serves 2 Ingredients... 4 granny smith apples, peeled, cored and roughly chopped 4 rhubarb stalks, cut into 3 cm pieces 2 tbsp caster sugar 1 tsp grated lemon rind 1 tbsp water cup rolled oats cup bukini seeds cup pecans, chopped 2 tbsp flour cup brown sugar 40 g butter, chopped Vanilla bean ice cream, extra thick cream or Greek yoghurt (thats what my kids like the best) to serve Instructions 1. Preheat oven to 180C. 2. Place apple, rhubarb, caster sugar, lemon rind, and water in a saucepan, cover with lid, and simmer gently for 5 minutes. 3. In a bowl, combine oats, flour, brown sugar, buckinis, pecans and butter. Rub mixture between your fingers until it looks crumbly. Transfer apple mixture to small baking dish, top with crumble mixture and bake for 20 minutes or until top is golden. 4. Serve with Vanilla bean ice cream, extra thick cream or Greek yoghurt
