25.01.2022 Making our special spring Swiss Cheese - Gruyere . Helpful Harvey helps out stirring the cheese curd . We heat the curd until it reaches the right temperature & then place it into our cheese moulds to make our Organic Gruyere. How lucky we are to share this craft to the next generation!



22.01.2022 Today we made our Cream Cream Cream Brie ! Lucsious ,rich & totally indulgent. All hand made from our fresh morning milk . Our cheeses are turned in their moulds & then cared for in our special cheese caves.

22.01.2022 A shining light over the farms calving paddock. Its just glorious to see the blue Spring skies. This is our Aussie Red girl No 1003 . She is also know as rainbow . Now a mum in waiting. Spring is here and we are excited & Ready for all the new life to be born on our farm .

21.01.2022 Our Farm is Certified Organic which means we use natural ways to manage & enhance our farm. Our goals are to have a balanced farm filled with abundance of native animals & beautiful cows grazing on our mixed species pastures . No chemicals are used on the farm . Only natural fertilisers are spread on our pastures to achieve healthy soils & healthy animals.

14.01.2022 Our Triple Cream Brie sweetens your mouth & its richness is something that is truly a special treat. Right now our grasses on the farm are in full growth cycles & filled with lush clover & herbs. So making our soft cheeses at this time of year is a pleasure. It produces luscious smooth cheese just so perfect on a platter shared with some special friends.

13.01.2022 National Threatened Species Day 2020 was celebrated actually yesterday. But we are celebrating new beginnings today with some local native trees being planted by some awesome helpers ! We love having such a unique Tasmanian Plants & animals on the farm. Farming for a better future .

09.01.2022 Our Triple Cream Bries are ripe & rich . So right now as the grasses & herbs in our pastures are growing with vigour. So this changes the how cheese ripens and the length of time it takes to become fully ripe. Some love it rich and oozy but others love it a little younger and slightly milder flavour. Either way we just love this cheese. This cheese will ripen well and has a lovely clover & pastural notes to the cheese from our beautiful spring milk.

08.01.2022 Excited to have these glorious bee hives back at the farm .Its pollination & honey making time ! We are looking forward to tasting this rich gold ! Thanks @kirkwoodharvest bee team for bringing these gorgeous hives out today! This season there is an abundance of flowers ready to have some bee action

07.01.2022 Gruyere is made by heating up our fresh milk. We then cut the cheese curd & pump it to our cheese press. We put both the whey & cheese curds onto the press until we are ready place into the cheese hoops . All by hand all carefully watched with each step of the way !!

05.01.2022 We will be seeing some of our old friends & making new friends tomorrow at the @Cradlecoastfarmersmarket from 8.30am-12.30 pm @peir one Ulverstone warf . We will bring our cheese basket filled to the brim with our North West Tasmanian Cheese !

04.01.2022 Some milk gorgeous for the calves & some for cheese making works well on our farm .Our mums & their calves are together at milking time . So it’s very cool to see the girls getting milked & their calves are waiting to meet up once they are finished. Matts checking on a few caves & as they wait amoungst the big girls.

04.01.2022 Wow we are super lucky & super excited to be able to be one of the breeders of spring-active species of dung beetle, the Onthophagus vacca. It originates from Morocco and was introduced to Australia in 2012 from beetle stock obtained from France. These guys will be full of activity during their busy months & our cows will provide them with lots of dung. A great initiative Cradle Coast NRM thanks to Tom & Ali for setting up the breeding pen !!

04.01.2022 We just can’t wait for this one to be released. Spring brings new flavours to our milk & a richness that makes our Swiss cheese sing on your tongue . Our Morbier is a creamy rich cheese that has a sublime ash rind ! This will be available direct from our farm gate or in selected stores. Will keep you posted !

04.01.2022 Checking on our big boys today grazing happily today . We often get asked what happens to the boys on the farm . Well here are some that were born late 2018. So it’s important as farmers and producers of dairy products that we have a happy and healthy farm as well as our loved animals. As organic dairy farmers we are passionate about giving a great life to all life .
