Honored to be part of this dish with our #extravirginoliveoil . . #riovistaolives #oliveoil #braciole ... #Repost @constance.muriel.grey BRACIOLE MESSINESI Tips and tricks learnt from my mother: 1/ Typically you would order the braciole meat from an Italian butcher. However, my mum has discovered that for an even greater mouth feel, go to a Viet butcher (our favourite is in Bankstown) and buy the beef used for pho. OR if you have a good relationship with your butcher you might be able to order it from them. 2/ The night before you make them, you want to slightly oil each layer of beef, this means you wont need any extra oil when bbqing them. 3/ On the day of, you want to prepare your seasoned breadcrumbs. Parsley, garlic, salt, pepper, parmesan. Also cube some topolino cheese for the filling. 4/ Clear as large a bench space as possible. Preferably in an air conditioned room. I like to lay down a layer of cling wrap as that greatly helps with the cleanup afterwards. 5/ Now, you'll want to soak your skewer sticks in water while you set up your table with a chopping board, a sharp knife, your oiled meat and your breadcrumbs. Plus a platter for the braciole. 6/ Carefully take one slice of beef. (It should be so thin as to be almost transparent. Think a thin slice of prosciutto) You know want to slice it so that you end up with two pieces as close to the shape of a triangle as possible. Lay these out with the point always away from you. 7/ Take a generous handful of the breadcrumbs and fairly liberally scatter over the breadcrumbs, you DO want some on the table, you will use these. 8/ Once each slice of beef has a layer of the breadcrumbs you'll now want to add one, two or three pieces of the topolino cheese to each slice depending on the size of the beef. You want enough cheese so that when you bite into a braciole it oozes out, but not enough that it doesn't melt in the very quick moment it's in the bbq. Less is more. Would love to have you jump on board and join a conscious movement ! - Stuffed lil eggplants 2 whole small Eggplants 3 tablespoons of @riovistaolives merchant spiced agrumato olive oil 4 large rainbow Swiss shard leaves, stalks removed and finely chopped leaves plants in boiling water for 20 seconds and refreshed 1 small onion finely diced 1/2 head of fennel finely diced 1 medium zucchini finely diced two large mushrooms finely diced 1 - 2 tablespoons of tomato paste 1 1/2 tablespoons of @merumiso chickpea miso paste Split the eggplants in half lengthways and score flesh with a sharp small knife in a crosshatched pattern. Place into a hot skillet flesh side down with a tablespoon of olive oil, place into the oven set at 170C for 20 to 25 minutes or until tender. Meanwhile in a medium-size pan set over moderate heat add in the onion, fennel, zucchini, Swiss chard stems, mushrooms with remaining olive oil and half a cup of water Continue cooking till soft and the mixture looks somewhat homogenous, add in the tomato paste and miso and mix well. Remove cooked eggplants from oven and top with the cooked vegetable mixture. Lay a large leaf of blanched Swiss shard or silverbeet over top of each eggplant half to encase the cooked vegetables. Place the prepared eggplant into a skillet and back into the oven for a further 10 to 15 minutes till somewhat crisp on the outside. It is one of the easiest things to make! Here’s the recipe for my favourite Granola with Maple Syrup It uses a combination of oats, puffed brown rice, macadamia nuts, walnuts (or pecans), flaked almonds, pumpkin seeds and coconut flakes. It’s sweetened with maple syrup and brown sugar which adds a lovely caramel note to this granola (I use this combination of brown sugar and maple syrup in my Sweet and Spicy Nuts as well).
